View Full Version : Best peanut butter rice krispy recipe?
I have been jonesing for a peanut butter rice krispy bar for days. I've done some searches on allrecipes.com and other sites and haven't been able to find what I want. Sure, I've made these before - they're easy! But mine always come out kind of hard which is not what I'm looking for.
I'm in search of the recipe that produces a bit softer bar, not gooey but...rich. Can anyone help me?

I'm not sure if this is what you're looking for, but these are so yummy:
Special K Bars
1/2 cup white corn syrup
1/2 cup sugar
3/4 cup creamy Jif (only Jif will do... other brands make bars hard)
3/4 cup Special K Cereal
6 ounces butterscotch chips (about half of a regular-sized bag)
3 ounces milk chocolate chips (about a quarter of a regular-sized bag)
1) Grease a 9x9" pan.
2) Bring syrup and sugar to a rolling boil. Remove from heat.
3) Stir peanut butter into syrup mixture. Add cereal. Pat into pan.
4) In a double boiler, melt butterscotch chips and then add chocolate chips. Pour over peanut-butter-cereal mixture. Allow to cool (chocolate will become firm) before cutting.
So tasty, so bad for you. :p

My friends mom used to make something like this I think....I would love the recipe as well. Hers had melted chocolate over the top of them also.
Reenie, one would think that subbing Rice Krispies wouldn't change the consistency much, would it? The bars I've had were made with those rather than Special K. :p

(basically the same recipe, but with the Rice Krispies)
1 c. sugar
1 c. light corn syrup
1 c. peanut butter
heat sugar and corn syrup in microwave until syrup is bubbling (a few minutes?) stir in peanut butter until all mixed.
add 6 c. Rice Krispies. Mix well and press into a greased 9x13 pan
melt 1 c. chocolate chips (I prefer milk chocolate over semi-sweet) and 1 c. butterscotch chips (about 1.5-2 minutes in the microwave, on 60-70% power, if you keep it in there too long, you'll scorch the chocolate and that's bad). Pour chocolate mix on top of bars.
Yum!

I use the same recipe as kdotp. It tastes really good without the chocolate/butterscotch chips over the top too.
This is an awesome alternative to the traditional Peanut Butter Rice Krispy bars:
Chocolate Peanut Butter Bars:
Ingredients
2 cups rice krispie cereal
1 1/2 - 2 cups powdered sugar
1 18 oz. jar peanut butter
2 tsps vanilla
1 bag chocolate chips (not semi sweet chocolate)
1/4 cup milk
Directions:
Add peanut butter and powdered sugar in a bowl, combine well. Add rice krispie cereal and stir until well coated. Add in 1 tsp vanilla and mix well. Set aside.
In a double boiler (or microwave), add chocolate chips, stirring constantly so as not to burn. Once chocolate has started to melt, add vanilla and milk and continue stirring until chocolate is completely melted. Remove from heat.
Form rice krispie mixture into 1 inch balls. Dip in chocolate and coat well. Remove from chocolate and place on wax paper. When all balls have been formed, refrigerate for at least 1/2 hour.
