View Full Version : Chocolate cake with bananas????

My two year daughter has asked Santa for a Chocolate Cake with Bananas and chocolate icing with sprinkles. I am looking for a recipe to send to him ;)
So I am looking for a cake with two layers and a banana filling in the middle or a banana chocolate cake and REALLY good (easy) fluffy icing! Anyone know of any that they are tried and they turned out? I have an awesome chocolate cake recipe.....but not a filling.

Do you want the bananas in the cake mix...baked together?? If so, here is a recipe. You could always make a banana flavored cake and then put chocolate icing in between with fresh sliced bananas and then frost it with chocolate icing with fresh banana slices on top!!

You could always do Devil's Food cake - with sliced banana and some banana pudding in between the layers, frosted with chocolate frosting, then press chocolate jimmies around the sides.

I did a search for "chocolate" and "banana" in the cake section of Allrecipes.com and got 4 recipes (well, 4, but 1 is a cheesecake). They all have at least 4 out of 5 stars too! (So I haven't tried them, but others have)

Chocolate Banana Cake


INGREDIENTS:
1/2 cup margarine, softened
1 1/4 cups brown sugar
2 eggs
3 squares unsweetened chocolate, melted
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1 1/2 cups mashed, ripe bananas
1/2 teaspoon vanilla


PREPARATION:
Cream margarine and brown sugar until light and fluffy. Add eggs one at a time. Beat thoroughly after each. Stir in the cooled melted chocolate. Sift dry ingredients together and add to the batter alternately with the mashed bananas; stir in vanilla.

Pour into 2 greased and floured 9-inch layer cake pans. Bake in preheated 350 degree oven for 35 to 40 minutes, until cake tests done. Frost with a fluffy white frosting.


Chocolate Chip Banana Cake

INGREDIENTS:
3 cups flour
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 ripe bananas, mashed
1 cup butter, softened
1/4 cup cream
1-1/2 cups sugar
4 eggs
1 tsp. vanilla
12-oz. pkg. chocolate chips

PREPARATION:
Preheat oven to 325 degrees F. Generously grease and flour a 12 cup bundt pan; set aside. In large bowl combine all ingredients except chocolate chips. Beat on medium speed for 2 minutes. By hand, stir in chocolate chips.
Pour into prepared pan. Bake at 325 degrees F for 65-75 minutes or until cake is firm and set and begins to pull away from sides of pan.
Immediately set pan onto a dishtowel that has been soaked in water and gently wrung out. Let pan sit for 5 minutes, then turn out onto serving plate (this will make the cake come out of the pan without sticking). Cool completely before serving. 16 servings




Chocolate Nut Banana Cream Cake Recipe

INGREDIENTS:
Cream Topping:
4 ounces (1/2 cup) cream cheese (half of a large 8-ounce block), at room temperature
1/2 cup sugar
1 egg, at room temperature
1/2 tsp vanilla extract

Banana Cake Batter:
1/2 cup butter (1 stick), at room temperature
1-1/4 cups granulated sugar
2 eggs, at room temperature
1 tsp vanilla extract
3 medium ripe bananas, pureed with 1/2 tsp lemon juice (1 cup banana puree)
2 cups flour
1-1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup (8 ounces) banana yogurt (see note)
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans, walnuts, cashews, or macadamia nuts

Icing:
1/2 cup confectioners' sugar
1 tsp milk or cream (about)
PREPARATION:

Preheat the oven to 350 degrees F. Line 9 x 13-inch baking pan with non-stick foil.

Make the Cream Topping:
In a medium mixing bowl, blend together the cream cheese and sugar with a hand mixer.
Add the egg and beat until incorporated and smooth. Mix in the vanilla extract. Set aside.

Make the Batter:
In a large mixing bowl, combine the sugar with the butter until well-mixed. It will look crumbly. Add the eggs, one at a time, blending completely after each one. Add the vanilla extract and bananas. Mix until combined.

In a separate bowl, combine flour with baking powder, baking soda, and salt.

Add the flour mixture and yogurt to the butter mixture, a third at a time, alternating between the two until all is incorporated. Fold in chocolate chips and nuts (pecans, walnuts, cashews, or macadamia nuts).

Pour batter into prepared baking pan and smooth. Drop dollops of the cream cheese topping on top of the banana batter, then smooth to cover.

Bake about 35 to 40 minutes, until lightly browned. Remove to rack to cool completely to room temperature.

Make the Icing:
Mix milk or cream with confectioners' sugar until smooth, adding enough liquid so it can be drizzled. Scrape into a zip-top bag, squeeze out the air, and seal. Snip a small corner from the bottom of the bag and drizzle the icing on top of the banana cake. Let sit at least an hour to set.
