I found this thread on the "other place" to be really helpful. Anyone care to share their menus this week? I'm still working on mine.

Yay! I finally have a moment to post! And what do I do, pick the thread I seem to suck at the most - go figure. On top of that, we never did make it out to the farmer's market this weekend.
Sun - both of us eat out seperately
Mon - chicken breasts, asparagus tips, maybe some rice
Tue - out with the hubby at some thing
Wed - I have Jr. League, he has a thing
Thu - dinner salad - maybe try my hand at a Southwest Chicken salad (open to suggestions with that one)
Fri - tends to be our planned night out so I'm not sure
Sat - weekends for us are crazy, we eat brunch WAY late and then tend to either eat dinner out again, or just do something low key

Monday - I'm going to a cooking class tonight, so I'll have whatever they're teaching!
Tuesday - Grilled Flank Steak with Roasted Peppers and Asparagus
Wednesday - Vindaloo Turkey Burgers with Curried Peas
Thursday - Coconut Shrimp with Apricot Dipping Sauce and Spicy Thai Salad
I'll be out of town next weekend, so I won't be cooking anything!

Wednesday- Meatballs and rice in a mushroom sauce
Thursday- Leftovers from night before because I'm alone for dinner
Friday- Canada Day!!! So we are barbecuing hamburgers and having a few friends over.
Saturday- Stirfry with beef tenderloin

This week is a more "take it easy" week for us.
Sunday: teriyaki bbq chicken, white rice, peas
Monday: chicken burritos, chips, salsa and guacamole
Tuesday: Citrus chicken, white rice, broccoli
Wednesday: spanakopita, rice pilaf, tzatziki
Thursday: Chicken lettuce wraps, white rice
Friday: cook out - burgers, chicken, mashed potato casserole, baked beans, salads.
Jeez ... we're eating a lot of rice! Almost all of this is frozen stuff from Trader Joes.
Here's my menu for the week, which has already been changed. Go figure!
Monday - was supposed to be club salad and malted chocolate milk shakes, but I had a late catered lunch at work to celebrate the end of the school year, so I wasn't hungry. It's okay though because I forgot to buy lettuce for the salad. I'll have to fit it in later in the week.
Tuesday - sesame chicken, fried rice, green beans and portobello saute
Wednesday - balsamic mushroom pasta, stewed tomatoes
Thursday - apple cider chicken, packet potatoes, corn
Friday - sloppy joes and pizza pasta salad
Saturday - cookout at DH's uncles house

I accidentally typed balsamic chicken pasta when it should have been balsamic mushroom pasta...oops! I do have some recipes for balsamic chicken, though. Here are the other recipes you asked for!
sesame chicken
Sesame Chicken:
2 Tbsp raw sesame seeds
2 Tbsp soy sauce
2 Tbsp hoisin sauce
1 Tbsp maple syrup or honey
2 tsp cornstarch
1/8 c dry sherry
1 Tbsp ginger root minced
1 clove garlic, minced
1/2 tsp five-spice powder
2 Tbsp all-purpose flour
1/2 tsp table salt
1/4 tsp black pepper
1 pound uncooked boneless, skinless chicken breast(s), cut into 2-inch pieces
2 tsp peanut oil
Instructions
Place a large nonstick skillet over medium-high heat. Add sesame seeds and cook until lightly toasted, shaking pan frequently, about 2 to 3 minutes; transfer seeds to a shallow dish and set aside.
Whisk hoisin sauce, soy sauce, maple syrup/honey, cornstarch, sherry, ginger, garlic and five-spice powder together in a small bowl; set aside.
Combine flour, salt and pepper together in a shallow dish; add chicken and turn to coat. Shake chicken pieces to remove excess flour.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and sauté until browned on all sides, about 5 minutes. Add soy sauce mixture to chicken and cook until sauce thickens and is almost evaporated, about 2 to 3 minutes more.
Dip chicken pieces in toasted sesame seeds and serve, drizzled with any additional soy sauce mixture. 4 servings
Chicken with Apple Cider Sauce
2 tablespoons vegetable oil
4 boneless, skinless chicken breast halves (about 1 pound)
2 teaspoons kosher salt
Freshly ground black pepper
3 tablespoons unsalted butter
1 tablespoon apple cider vinegar
3/4 cup apple cider
1/2 cup low-sodium chicken broth
1 tablespoon fresh lemon juice
1 teaspoon fresh thyme leaves
Preheat a medium to large skillet over medium-high heat, for about 1 minute or until the surface of the pan is hot. Add the oil and heat until rippling on the surface. Pat the chicken breast dry and season with salt and pepper. Place the chicken in the pan and cook until the meat is golden, about 4 minutes. Turn the chicken breasts, lower the heat to medium and add 1 tablespoon of the butter. Cook until firm to the touch or an instant-read thermometer registers 160 degrees F, about 4 to 6 minutes more. Transfer the chicken to a plate to rest.
Pour off any fat remaining in the skillet. Add the vinegar and deglaze over medium-high heat, scraping up any browned bits stuck to the bottom of the pan with a wooden spoon. Add the cider and the broth. Bring to a boil and cook until it thickens to form a sauce, about 6 minutes. Whisk in the remaining 2 tablespoons butter, lemon juice and thyme leaves. Return the chicken to the pan, adjust the seasoning with salt and pepper, and serve.
Pizza Pasta Salad
2 cups (8 oz.) RONZONI Elbows, uncooked
1 cup (4 oz.) sliced pepperoni, cut in half
1 cup thinly sliced pitted ripe olives
1-1/2 cups chopped fresh tomato
2 cups (8 oz.) cubed or shredded mozzarella cheese
1 cup (8 oz.) Italian salad dressing
2 teaspoons finely chopped garlic
2 teaspoons dried oregano leaves
Cook pasta according to package directions; drain.
Rinse with cold water to cool quickly; drain well.
In large bowl, stir together cooled pasta, pepperoni, olives, tomato and cheese.
Add dressing and seasonings; toss lightly.
Cover; refrigerate.
9 servings (1 cup each).

Ha, that's my sesame chicken recipe! :D I just made it on Sunday - good stuff.
The sauce is a good general stir-fry sauce - I usually double it and put that in with some stir-fried veggies as a side dish.

We have to eat a lot of leftovers/quick foods because of our jobs.
Sunday: Tri-tip; salad w/blue cheese, strawberries, almonds, and homemade croutons, fresh cornbread
Monday: Tri-tip sandwiches, salads
Tuesday: Aritchoke ravioli (pre-packaged from Trader Joes-wasn't our favorite), rosemary bread I made into garlic bread, and salad w/blue cheese & almonds
Wednesday: My junk food craving night-all beef hot dogs, tater tots w/lots of Lawry's seasoning-yum; probably a salad
Thursday: I'll be at my neighborhood Girls' Night where we have appetizers and wine for dinner; DH will be on his own and will probably get takeout
Friday: Takeout eaten at home
Saturday: Out to a restaurant

Tuesday - beef stir-fry and brown rice
Wednesday - red beans and rice. Home in the crock pot as we speak!
Thursday - probably red beans and rice again
Friday - eat at the movies; we're taking in a double feature. :)

We don't do it for designated nights like you girls; I make the menu for two weeks, minus two days, and then we choose the day of. Here's ours for the next two weeks:
1) Secret Marinade Steaks with boiled red potatoes and broccoli
2) Steak fajitas with spicy refried beans and Mexican-style rice
3) Sloppy Joes sandwiches with broccoli
4) Chicken Scampi with peppers over rotini
5) Feta & Bacon stuffed chicken breasts with asparagus and herbed rice
6) Bacon, lettuce and tomato sandwiches
7) Sun-dried tomato chicken breasts with rice and asparagus
8) Spicy garlic lime chicken with garlic rice and broccoli
9) Pulled BBQ sandwiches with broccoli
10) Ground beef tacos with refried beans and Mexican-style rice
11) Roasted garlic and cheese stuffed tortellini with caesar salad and cheese Texas toast
12) Homemade bell pepper pizza with salad

Thanks for much for the inspiration! I haven't done a menu in a while because it gets messed up with our schedules, but I'm going to attempt it again. Right now I'm just getting a list together - separated by main course like beef, pork, pasta, etc...then I'll work on coming up with something.

My mom never did this....... and so I never have either and it is sooooo inefficient to not plan this way (IMO)!!! Thank you for posting this thread!!! I fly by the seat of my pants every evening in the kitchen and end up at the grocery store multiple times during the week! Not to mention, I'm in a total rut! This will be wonderful!! Thanks for the inspiration ladies! I'm going to make one today for next week!! I'll post it to share!!!

Bumping this with my weekly menu, because I need ideas for next week!
Mon: Grilled portabellas, carmelized onions and havarti sandwiches with tomatoes and grilled asparagus
Tues: Soup and salad: we have lots of peppers from last week's farmer's market, so we will grill those and make roasted red pepper soup
Wednesday: pork tenderloin in a ginger glaze with sweet potato salad
Thursday: hummus, tabouli, and couscous "platter", with greek olives
Friday: red snapper in chipotle galze, red beans and rice, corn on the cob
This week's menu...
Sunday - out to dinner
Monday - shrimp fra diavolo, ziti
Tuesday - mahogany chicken wings, Lipton side, sausage & peppers (we're having company and I was supposed to cook the s&p on Sunday)
Wednesday - chicken tetrazzini
Thursday - parmesan crusted pork chops, rice casserole
That's as far as I got, but there's a carnival nearby this week, so we might go there one night. I usually shop on Sundays, but I want to change that.

monday: orrechetti with peas, onions, and pecorino romano cheese (new recipe)
tuesday: chicken with masala simmer sauce and naan (simmer sauce and naan from trader joe's)
wednesday: tom usually goes out with friends, i'll probably have sushi take-out or frozen pizza!!!
thursday: dill-stuffed shrimp, green beans sauteed with peppers, rice (new recipes)

jarm - it was just 1/4c of apricot All-Fruit spread, 1 Tbsp prepared horseradish and 1 tsp teriyaki or soy sauce.
I thought it was too horseradish-y, so next time I will probably do 1 Tbsp of teriyaki sauce and 1 tsp horseradish instead.

sunday 7/24 -- ordered take-out. indian food. we were tired from doing housework and yardwork all day, and neither of us wanted to cook.
monday 7/25 -- sesame-seed encrusted tuna with a citrus sauce, panfried broccolini, rice pilaf
tuesday 7/26 -- spinach salad with blue cheese, dried cranberries, and spiced pecans and bread from the amazing bakery up the street
wednesday 7/27 -- DH goes out with coworkers every wednesday, so... i don't know what i'll have but right now i'm thinking sushi...
thursday 7/28 -- homemade penne alla vodka
friday 7/29 -- on the road, en route to a friend's wedding, so it's either rest-stop grub or pizza
saturday 7/30 -- whatever they serve at friend's wedding :)
not the best week for us, but next week we'll be back to cooking regularly.

nah, the rice pilaf was the "near east" kind that you can toss in the microwave :)
the tuna, on the other hand... we bought fresh yellowtail tuna and rubbed sesame oil on it. we then rolled it in sesame seeds, trying to stick on as many as possible. then, we heated up some more sesame oil in a frying pan and pan-seared the tuna about 90 seconds on each side so the sesame seeds got toasty and crisp on the outside while the middle stayed rare.
the citrus sauce was ok, but i think a soy-ginger sauce would have gone better. but anyhow, to make the sauce, mix together 3 oz orange juice, 1 1/2 teaspoons lemon juice, 1 1/2 tsp soy sauce, and 1 1/2 tsp sesame oil. then add a teaspoon of cornstarch to thicken and heat on the stove. it's light but not too sweet, and its' really good on plain grilled tuna or swordfish.

I don't plan by days, just by meals. I'm a vegetarian, my dh and kids are not, so I have to make meals I can either leave the meat out of or plan substantial sides.

Sposa06, it's a Rachael Ray recipe. I was looking for good recipes and went to the Food Network site tonight.
Pesto Mashed Potatoes
2 1/2 pounds small red skinned potatoes
Coarse salt
1 cup stock or chicken broth
1 cup prepared store bought pesto
Cut larger potatoes in half and leave small potatoes whole. Cover potatoes with water and bring water to a boil. Add salt and cook until potatoes are tender 10 to 12 minutes. Drain potatoes and return them to hot pot. Add broth or stock and smash the potatoes up. Add pesto and smash to desired consistency. Serve while hot.

Jambalaya with cornbread
Chicken Fried Rice
Grilled Sausages with Mac and Cheese and sweet potatoes
Grilled BBQ chicken with sauteed asparagus and roasted red BBQ potatoes
Mamo Chops (seasoned pork chops), mixed grain rice, black eyed peas
Corn Crusted Lime Chicken, Corn on the Cob, Mac and Cheese
Homemade pizza
If chicken is too expensive we may trade out a few for:
Teriyaki salmon, onions/zucchini/mushroom grill, rice
Corn Crusted Tilapia, corn and cubed roasted potatoes with spices
I hope this helps because we SUCK at sticking to menus and eat out way too much. We need to stop because DH is going back to being a full time student in a few weeks. Life is changing!
We've got one week on our own and then my parents are taking us to the Commissary!

I need to start looking here for some inspiration! I hate cooking during the summer because nothing sounds good when it is 100 degrees out!
Sunday-Herbed Chicken Pasta from allrecipes.com... it was pretty good!
INGREDIENTS:
1 pound uncooked linguine
2 teaspoons vegetable oil
1 1/2 cups fresh sliced mushrooms
1/2 cup chopped onion
1 clove garlic, minced
1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon ground black pepper
2 cups chopped tomatoes
1/4 cup grated Parmesan cheese
--------------------------------------------------------------------------------
DIRECTIONS:
Cook pasta in about 4 quarts of boiling salted water until al dente. Drain.
Meanwhile, heat oil in a large nonstick skillet over medium high heat until hot. Add mushrooms, onions, and garlic; saute 2 minutes. Add chicken, salt, basil, and pepper; saute 5 minutes, or until chicken is done. Add chopped tomato, and saute an additional 2 minutes.
Serve chicken herb sauce over pasta. Sprinkle with Parmesan cheese

Crab Stuffed Portobello mushrooms
Ingredients:
8 Portobello mushrooms
1 (8 ounce) block cream cheese, softened
1/4 cup mayonnaise
1 teaspoon lemon juice
Dash of ground red pepper
1 pound crabmeat, shell pieces removed
1/2 cup (2 ounces) shredded Swiss cheese
1/2 cup dry bread crumbs
Directions:
Preheat oven to 425º. Remove brown gills from the undersides of mushrooms using a spoon; discard gills. Remove and discard stems. Set mushroom caps aside. Beat cream cheese at medium speed of a mixer until smooth. Add mayonnaise, lemon juice and red pepper; beat well. Stir in crabmeat and cheese. Spoon mixture evenly into mushroom caps; sprinkle on each cap with 1 tbsp. breadcrumbs, and place on a baking sheet. Bake for 15 minutes or until tops are lightly browned.

Easy Teriyaki Beef and Noodle Bowls
Prep Time: 20 min
Makes: 2 (1 3/4-cup) servings Nutrition Information
A 20-minute teriyaki-style bowl rivals any take-out meal for time and flavor!
1/2 lb. lean ground beef
1 (9-oz.) pkg. Green Giant® Frozen Vegetables Teriyaki
1 1/2 cups water
1 (3-oz.) pkg. oriental-flavor ramen noodle soup mix
2 tablespoons chopped peanuts, if desired
1. Brown ground beef in medium skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
2. Add frozen vegetables and water; mix well. Bring to a boil. Break noodles into 4 pieces; add noodles and 1 teaspoon of the seasoning from soup mix to beef mixture. (Discard remaining seasoning mix or reserve for a later use.)
3. Reduce heat to medium; simmer 5 to 6 minutes or until vegetables are tender, stirring occasionally to separate noodles.
4. To serve, spoon mixture into individual bowls. Sprinkle with peanuts. If desired, serve with soy sauce.
Make Ahead Cheeseburger lasagna
prep tme 40 minutes(ready in 10 hours and 10 minutes)
1 1/2 lb. lean ground beef
3 tablespoons of instant minced onion
1 (15 oz) can of tomato sauce
1 1/2 cups of water
1/2 cup of kechup
1 tablespoon prepared mustard
1 egg
1 (15 oz) container of ricotta cheese
8 oz. (2 cups) shredded cheddar and american cheese blend
12 uncooked lasagna noodles
4 oz.(1 cup) shredded cheddar cheese
1 cup shredded lettuce
1 medium tomato sliced
dill pickle slices
1. Spray 13x9 inch(3 quarts) glass baking dish and large nonstick skillet with nonstick cooking spray. In sprayed skillet, cook groud beef and onion over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked stirring frequently. Add tomato sauce, water, ketchup and mustard, mix well, simmer 5 minutes stirring occasionally.
2.Meanwhile, beat egg im medium bowl. Add ricotta cheese and 2 cups of the cheese blend mix well.
3. Spread 1 cup of beef mixture in bottom of sprayed baking dish. Arrange 4 uncooked noodles over sauce. Spoon and spread half of ricotta cheese mixture over noodles; top with 1 1/2 cups of beef mixture. Repeat layers once. Top with remaining 4 noodles, beef mixture and the 1 cup of cheddar cheese. Cover with foial, refrigerate at least 8 hours or orvernight
4. When ready to bake, heat over to 350 back lasagna covered for 45 minutes
5. uncover baking dish, bake additional 25-35 minutes or until bubbly. Remove from oven. Cover with foil let stand for 5-10 mintues before serving
6. Just before serving top with lettuce, tomato and pickle slices. Serve with additional ketchup if desired.
Western Chicken Potatoes
2 large baking potatoes
2/3 cup of shredded bbq chicken(Lloyds or a different brand)
1 oz. (1/4 cup) finely shredded cheddar-monterey jack cheese blend
2 tablespoons chopped red onion
2 tablespoons chopped fresh cilantro or parsley
1. Scrub potatoes, prick several times with fork. Place potatoes on microwave safe plate, microwave potatoes om high or for about 8 mintues until tender
2.Place checken in bbq sauce in small microwave safe bowl cover with microwave safe paper towel. Microwave on high for 2 mintues on until well heated stirring after 1 mintue
3. Split potatoes in half, place on plates and top with chicken, cheese, onion and cilantro.

msnicolea - we're trying to do as much vegetarian as possible too, around 5-6 nights a week. I've definitely noticed a difference in my grocery bill!

Going (semi) veggie has saved us tons of money-and I really have felt better. I'm not ready to pull the trigger and go 100% ( I was a vegetarian for over 10 years previously)--I think the bratwursts in Wisconsin have messed with my mind!
Here's my falafel recipe, courtesy of Emeril:
1 1/2 cups cooked and drained chickpeas
1/2 cup finely chopped yellow onions
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice, or water
2 teaspoons chopped garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon cayenne
1/2 teaspoon baking powder
6 tablespoons all-purpose flour
4 cups vegetable oil, for frying
Combine the chickpeas, onions, parsley, lemon juice, garlic, coriander, cumin, salt, turmeric, and cayenne in the bowl of a food processor. Process on high speed until it forms a smooth paste, scraping the sides of the bowl as needed. Transfer to a bowl and add the baking powder and flour. Adjust the seasoning, to taste. Refrigerate until firm, about 20 minutes.
Heat the oil to 360 degrees F. in a deep pot over medium-high heat.
With damp hands, shape the chickpea batter into balls about 1 1/2 tablespoons each and then flatten into patties. Fry in batches until golden brown, about 3 minutes. Drain on paper towels.
I usually serve it with tzatziki, but tahini sauce is good, too!
When feelng less inclined to make it from scratch, I use the Fantastic Foods mix--it's really good!

Thursday: Oriental Beef Stir Fry, brown rice. B will have a bowl of teriyaki cabbage.
Friday: My fiance is taking me out on a dinner-n-dancing date. :)
Saturday: Dinner at his best man's house
Sunday: Pork chops, Skillet casserole of bulgur wheat & crimini*, steamed broccoli, and warm homemade applesauce for dessert.
Monday: Turkey Burgers, salad of spring mix, pears, gorgonzola, almonds & balsamic, and oven-fried yukon golds.

Awesome - we're moving out of our apt in a month and I'm trying to get rid of all of our food before we go. Sounds like this will knock out the tilapia and some lentils all at once!
Now, do you have a recipe that requires 10 cans of tuna, 2 bags of frozen cauliflower, 6 cans of diced tomatoes, several pounds of dried chickpeas, a turkey breast, a pork loin, and 2 bottles of barbeque sauce? TIA. ;)

from The Ritz-Carlton Kapalua
Serves 4
Raita
3/4 cup plain yogurt
2 TB EVOO
1/3 cup peeled, seeded cucumber
1 TB chopped fresh mint
1 TB chopped shallot
1/2 garlic clove, minced
Whisk yogurt and olive oil in medium bowl. Stir in remaining ingredients. Cover and chill (can be made 1 day ahead).
Fish
5 TB butter, divided
6 large shallots
4 6 oz tilapia fillets
Melt 3 TB butter in heavy large skillet over medium heat. Add shallots and cook until deep brown, stirring often, about 15 minutes.
In another pan, heat remaining butter over med-high heat. Add fish, cook about 4 minutes per side, until just opaque in center.
Lentils
1 cup dried green lentils (soaked overnight)
1 cup chopped onion
1 TB minced peeled fresh ginger
2 large garlic cloves, minced
1 tsp garam masala
1 tsp cumin
2 cups chicken broth
fresh cilantro for garnish
Drain and rinse lentisl, after overnight soaking
Melt 2 TB butter in heavy large saucepan over medium heat. Add onion, ginger, and garlic--cook until onion is translucent, about 7 minutes. Stir in garam masala and cumin--saute 2 minutes. Add broth and simmer 5 minutes. Add lentils, bring to a boli, then reduce heat to medium and simmer uncovereed until almost all liquid evaporates and lentils are tender, about 28 minutes.
Stir in remaining butter, serve fish over lentils, raita over fish, garnish witrh cilantro, and VOILA!

Tuesday - steak sandwiches (have a doctor's appointment at night so it needs to be a quick dinner)

That's all I could come up with. And I probably won't even get to make half of this.

Tuesday: black bean and sweet potato burritos with DH's homemade guac (we eat these a lot!)
Wednesday: butternut squash soup (leftover/frozen from two weeks ago), french bread
Thursday: spinach salad with eggs, warm bacon dressing
Friday: Out for FISH FRY
Saturday: Friends for dinner
Sunday: Beef Stew with buttermilk biscuits

msnicolea I've seen you post about these before and they sound so good. Care to share the recipe?
Sure-although, it's not really a recipe per se, as much as a "throw stuff together in a pot-cipe." In general, it goes something like this:
~Bake or boil sweet potatoes--whatever your preference. We bake them and keep the skin on, but not everyone likes skin, so. . ..
~While they are baking, make the beans: I use canned black beans (2 regular cans), to which I add minced garlic (3-4 cloves, but do to taste), cumin, salt, cayenne, and other spices to taste. Once the potatoes are done, chop and add to bean mixture. Let beans, etc. . . cook on med-low for a good 20-30 minutes, in order to absorb all the spices and flavors
~saute onions and green peppers
Assemble burritos with the fillings (taters, beans, veggies)--we add grated queso and then put in the oven for a bit to melt cheese and heat tortillas
Is this clear enough? It really isn't very precise, but it always turns out yummy!

It is good! I just make a bag of pasta ( I like penne) according to package directions, and to that add one 15 oz. can of tomato sauce and one 15 oz. can of pizza sauce. To that, you can add your favorite pizza toppings, I usually add 1/2 lb. sausage, 1/2 lb. ground beef (brown these first), and whatever amount of pepperoni looks good. Then top with mozzarella cheese, and bake at 350 for 25 minutes or until heated through. I usually bake it in a casserole dish.
It's nice because it's very easy, makes quite a bit, and can be made lots of different ways!

Okay, here's my first attempt. I found I was spending too much on groceries and throwing too much away so I just went with my little menu and I hope it works out.
Monday: Penne With Vodka Sauce, Garlic Bread and green salad
Tuesday: Cheeseburger Noodle Casserole
Wednesday: Trader Joe's Cheese Enchiladas (We're going furniture shopping after work so I'll take a little help from the store tonight).
Thursday: Black and Blue Steak Salad (Grilled Steak crusted in ground black peppercorns and blue cheese)
Friday: Pizza with friends
Saturday: Tailgating - I'm making Ribs and Pumpkin Bars but there will also be brats and burgers and a million side dishes.
Sunday: Chicken Parmesan
How does that look?

Dorito Casserole
Ingredients
• 1 can chili with beans
• 2 cups sharp cheddar cheese, grated
• 1 large 12-ounce package Doritos (save 2 cups for casserole topping)
• 10 to 15 oz. enchilada sauce
• 8 oz. can tomato sauce
• 2 tbsp. onion, grated
• 1 1/4 cup sour cream
Directions
For the topping, set aside sour cream, 1/2 cup of the grated cheese, and 1/3 of the Doritos bag.
Grate a small onion and measure 2 tablespoons and set aside. Take remaining 6-cups Doritos and crumble with your hands into mixing bowl.
Mix the onion, and all the other ingredients, except those for the topping, and place into an 8 1/2 x 11-inch casserole dish.
Bake for 20 minutes at 375 F.
Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle 1/2 cup cheese.
Bake for an additional 5 minutes and serve.

We ate this tonight--I made a few changes, and would make several more if I make this again. My changes in bold. ETA: The leftovers were like potato PASTE!! I will definitely use less flour next time I make this. It did thin down OK with some skim milk when I reheated the leftovers, but it still had a bit of a flour-y texture.

Baked Potato Soup
From Cooking Light
All the flavors of a loaded baked potato come together in this rich, creamy soup.
4 baking potatoes (about 2 1/2 pounds)
2/3 cup all-purpose flour
6 cups 2% reduced-fat milk I used skim, as I felt the fat content was still a bit high--it was plenty thick, even with the ff milk.
1 cup (4 ounces) reduced-fat shredded extra-sharp cheddar cheese, divided
1 teaspoon salt
1/2 teaspoon black pepper
1 cup reduced-fat sour creamI used fat-free, but it lacked flavor--go with the reduced fat
3/4 cup chopped green onions, divided
6 bacon slices, cooked and crumbled
Preheat oven to 400°.
Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Discard skins.
Lightly spoon flour into a dry measuring cup; level with a knife. Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, salt, and pepper, stirring until cheese melts. Remove from heat.
Stir in sour cream and 1/2 cup onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Sprinkle each serving with cheese, onions, and bacon. I just mixed the crumbled bacon into the soup.
Yield: 8 servings (serving size: about 1 1/2 cups soup, 1 1/2 teaspoons cheese, 1 1/2 teaspoons onions)
