Does anyone know what this dish may be or a recipe for it?

I had it at a food festival, but didn't catch the name. It was kind of hot, obviously marinated in something, and it was quite pink.

I have colleagues I could ask, but I don't want to sound stupid, especially if it's an American Indian dish that doesn't really exist in India, KWIM?

I'm guessing tandoori, too, which looks like this: http://www.royalspice.co.uk/13tandoori_chicken.jpg and is often found at buffets and festivals.

Thanks. That's probably it. I think because what I had was boneless, skinless chicken breast, it looks different what you posted msnicolea, but since you both are saying it's tandoori, it's worth a shot.

Another one chiming in for Tandoori chicken. It's very pink through the meat.

Many times, the tandoori chicken I get at festivals and such is boneless but at the restaurant it is not. :)

Yeah, sure, I'll take tried and true over a googling any day!

While I'm making a meal out of it - any ideas for sides besides naan?

raita
basmati rice with lentils
curried okra (I love okra)
chai

I have recipes that we think are great, but I will have to get them to you later. I cooked these things for a friend visiting from India, and he said they were authentic tasting. Yes, he wanted an Indian dinner. :D

grilled tomatoes, grilled green onion and some plain basmati rice.

I usually serve mine with pre-made raita and mango chutney

...or maybe some vegetable biryani.

If it was dry, it's definetely Tandoori chicken. Most tandoori chicken you get at restaurtants made in a clay oven called a tandoor. My dad always said the mark of a good Indian restaurant was to see if the tandoori chicken was good and not dry.

If it wasn't dry, then most like it was chicken tikka masala.

I like this recipe. (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_16385,00.html) and do it with boneless meat on skewers along with marinated red onions and green peppers.

Ok, now I feel like Indian food.

My mom has a quick and easy recipe for tandoori chicken that cheats (a little). You can buy a jar of tandoori paste in the supermarket (look in the ethnic aisle). The measurements are not exact - but for each package of skin-less chicken legs, she first cleans then and cuts slits in the meat so the masala will soak in. Then she combines:

3-4 tablespoons of the jarred paste
2-3 tablespoons of plain yogurt
minced garlic (6-7 cloves)
grated giner (maybe 3 TBs)
turmeric powder
a little salt

She mixes this with the chicken, and lets it marinate overnight. Then you can grill or roast.
