I made this last night and HAD to share. It turned out to be the best baked-potato topping FH and I have ever tried. It's a slightly modified version of a recipe from Cooking Light:
1/4 lb pancetta, diced
1 tsp finely chopped garlic
1 container low-fat sour cream
Gorgonzola cheese to taste
Chives, chopped
In a small non-stick skillet, brown the pancetta until crispy. Add the garlic and sautee for another minute (but don't let the garlic turn brown). Set aside to cool.
In a bowl, mix sour cream with crumbled gorgonzola (I used a small wedge of the cheese). Salt is not necessary, but if desired, add some fresh-ground pepper.
Mix in cooled pancetta mixture and stir.
Top baked potatoes with mixture, then sprinkle with chives.
