View Full Version : Best Baked Potato Topping!

I made this last night and HAD to share. It turned out to be the best baked-potato topping FH and I have ever tried. It's a slightly modified version of a recipe from Cooking Light:

1/4 lb pancetta, diced
1 tsp finely chopped garlic
1 container low-fat sour cream
Gorgonzola cheese to taste
Chives, chopped

In a small non-stick skillet, brown the pancetta until crispy. Add the garlic and sautee for another minute (but don't let the garlic turn brown). Set aside to cool.

In a bowl, mix sour cream with crumbled gorgonzola (I used a small wedge of the cheese). Salt is not necessary, but if desired, add some fresh-ground pepper.

Mix in cooled pancetta mixture and stir.

Top baked potatoes with mixture, then sprinkle with chives.

OMG, that sounds soooooo good!! I don't know if I can top that. My favorite is just the old standard loaded potato with butter, sour cream, bacon, cheddar cheese and chives. Boring compared to the above....

Another favorite is from Jason's Deli. They top it with their broccoli and cheese soup. YUM!!
