For dinner last night I had meatballs and salad.

Tonight:

Spare Ribs w/ BBQ sauce cooked in the oven
Fried Polenta
Endive, avacado & pear salad w/ gorgonzola

None of it goes together but it all sounded good.

Okay so i'm not proud, but after burning my rice a roni :rolleyes: .... i made a pb & j. i tried to scrap the non burnt off the top, but it tasted it gross :eek: ... I REALLY need to learn to cook.

Last night we had barbecue ribs (hubby cooks them for 6-8 hours on the charcoal grill - so good) and an asian slaw with peanut dressing.

Tonight I made Spiced Yogurt Grilled Chicken (sounds weird but it's a lot like tandoori chicken). I topped it with an Avocado Herb salsa and served with a big green salad.

I went to a cooking class where we learned proper knife skills, so we had a lot of stuff that required chopping and slicing: fajitas w/ pico de gallo, roasted root vegetables w/ balsamic glaze, and minestrone soup with basil chiffonade.

Kind of a weird combo, but at least now I can chiffonade basil! :)

Yesterday - Thai Ginger Soup & chicken pieces w/ crushed taco chips on top w/freezer burnt peas (I didn't realize they were freezer burnt until I ate them) :D

Tonight: FH is begging for homemade pizza w/ beef on top...good thing it's only like 95 freakin' degrees outside...kitchen, here i come!

HMM! Now you all have me thinking. Last night I went to my parents house for a roast dinner(dh had school) but that whole wheat pasta with meat sauce someone mentioned sounds like a plan tonight.

This will be a great thread to make me actually come up with(borrow some of your) good ideas.

I made that Grilled Chicken with Coconut Sauce from the Everyday Food magazine. It was pretty darn good, a little too spicy b/c of the jalapenos but i didn't notice till i stopped eating and my mouth was on fire, hahaha.

I made the following, with rice pilaf:

Sweet & Tangy Garlic Chicken

Servings: 6

6 (4oz) Skinless Boneless Chicken Breasts
1 tablespoon Olive Oil
1/2 teaspoon Black Pepper
1 1/2 tablespoons Tomato Paste
3 Cloves of Garlic (crushed)
1 cup Chicken Broth
1/4 cup Balsamic Vinegar
4 tablespoons Scallions (chopped)
1 tablespoon Honey

Heat oil in a medium/large frying pan.
Add chicken and brown on all sides (around 10 minutes)
Remove from pan and drain off any excess fat.
Add remaining ingredients to the pan & bring to a boil.
Return the chicken to the pan & reduce heat
Simmer for 30 minutes

CALORIES 215
FAT 4.4 g
CARBS 3.6 gr

yesterday was chinese (I didn't feel like cooking and asked if it was okay to swap it out for tonight, our usual night out).

Tonight we're having a homemade Cobb'ish salad...turkey breast, egg, avocado, carrots, cukes, tomatoes, peppers, mixed greens, and some yummy curd mozzarella cheese (gotta love the farmer's market!) :D

Really, we ate our big meal for lunch--grilled cheeseburgers, new potato salad, cuke/tomato/pepper salad, grilled corn, and homemade strawberry shortcake.

Both of us were hungry. We had boneless chicken wings from the Schwan's Man, multi-grain loaves of bread (also from Schwan's), diced potatoes that I baked in the oven with the bread and wings, and seafood chowder.

Tonight we had "foil packet chicken". I get skinless boneless chicken strips and put that in a foil packet with cut up red onion, yellow bell pepper and green bell pepper. Season with salt, pepper and various seasonings (take your pick) and top with bbq sauce. Seal foil packet and bake at 350 for 1 hour. I served with Lipton Broccoli and Cheese rice. Very easy and yummy!

Last night I made lemon chicken pasta-- chicken with veggies (peppers, onions, mushrooms, and asparagus) seasoned with lemon juice, oregano, salt, pepper, capers, and parm. cheese-- and tossed together with a 1/4 box of spaghetti.

A great summertime pasta dish :)

Wheat pasta with sliced sausage and halved cherry tomatoes. (The sausage and tomatoes get cooked together w/basil on the burner in a saucepan for ~15 minutes). Had enough left over for my lunch today. Yum!

We ordered pizza last night.

This was what I made tonight, it was delicious:

Italian Sausage with Peppers

Makes 4 Servings

Ingredients

2 tsp olive oil
1 Bermuda onion, halved lengthwise and thinly sliced
1 red bell pepper, seeded and thinly sliced
1 yellow bell pepper, seeded and thinly sliced
1 green bell pepper, seeded and thinly sliced
1 fennel bulb, trimmed and thinly sliced
2 garlic cloves, thinly sliced
1 cup canned diced tomatoes
Salt and freshly ground pepper to taste
1/2 pound cooked Italian pork sausage (hot, sweet, or a combination)
2 cups penne pasta
1/4 cup chopped basil
2 tbsp chopped flat-leaf parsley

In a large non-stick skillet, heat the oil. Sauté the onion, bell peppers, and
fennel until the vegetables turn golden, 8-10 minutes. Add the garlic and sauté
1-2 minutes longer. Stir in the tomato, salt, and pepper. Reduce the heat
and simmer, stirring occasionally. Add the sausage; simmer covered, stirring
occasionally, until the flavors are blended, about 20 minutes. If the sauce
becomes too dry, add 1-2 tablespoons of water. Meanwhile, cook the penne
according to directions; drain. Add the basil, parsley, and penne to the
sausage mixture; toss to combine.

No the spanakopita was frozen at Trader Joes. I wish I knew how to make it but this is much easier. It is with the other frozen appetizers but we eat it as our main course. It is a great light dinner!

Tonight is dinner exchange with my moms club...the theme is pizza so it will all be italian related Im sure! Im making salad for it, and I found a recipe for the Olive Garden Dressing that Im going to try out!

Tonight, it's leftovers from this Cooking Light chili recipe. I highly, highly reccomend it. It's some of the best chili I've ever had. For those doing WW, it's 8 points. Not bad for chili.

All American Chili

6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese

Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.
Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.

Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.

Note: Like most chilis, this version tastes even better the next day.

Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

We usually try to do it twice a month....we have different moms volunteer to host it at their house and whoever hosts gets to pick the theme. Typically everyone who wants to come will RSVP to the mom host and with what they want to bring based on the theme. The host mom then sends out an email saying whos bringing what and approx how many people.

We try to keep them small groups so that we're not making huge quantities of food. We have found that about 4 or 5 families is a good size.

You make one dish...and then go and fill up with all the food...So like today I made a huge salad for "Pizza Night" Theme and when I got there ...there was cheese pizzas, mexican pizzas, pasta dish, breadsticks, minestrone soup, salad, buffalo wings, and dessert pizza. So I just fill up my tupperware with what I want and bring it home for dinner!!

I cooked for DH tonight (he usually does all the cooking). He made grilled porkchops with fresh homemade Thai sauce (he found a recipe on the gourmet fish sauce bottle) the other night so I wanted to treat him tonight. I started with delicious vine-ripened tomatoes sliced with basil and mozzarella cheese for an appetizer, prosciutto and crusty french bread dipped in a balsamic vinegar/olive oil sauce, and then served oven baked "fried" chicken (the healthy way to have breaded crusty chicken, as I used olive oil sprayed onto the baking dish instead of deep-frying in oil).

1. Preheat oven to 500 degrees F. In small saute pan, saute garlic with the oil until tender. Remove from heat and stir in brown sugar. Place chicken breasts in a greased baking dish and cover with the garlic and brown sugar mixture. Bake uncovered for 15-30 minutes.

I made this last week, but had to come here and post about it! Delish and quick!

Famous Butter Chicken
(from allrecipes.com)
2 eggs, beaten
1 cp crushed buttery round cracker crumbs
1/2 tsp. garlic salt
ground black pepper to taste
seasoning salt to taste (optional)
4 skinless, boneless chicken breast halves
1/2 cup melted butter

preheat oven to 375.

Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in eggs, then dredge in the crumb mixture to
coat.

Arrange coated chicken in a 9 x 13 baking dish. Pour melted butter over chicken.

Bake in preheated oven for 40 minutes or until chicken is no longer pink and juices run clear.

**I was kind of leary about this recipe because I thought it would taste like a big ball of butter, but surprisingly it came out great and the chicken stayed really tender!

I made chicken/broccoli/pasta. Steamed broccoli with penne (or any pasta) mixed with sauted chicken that was marinated with italian dressing. Put some parmesan cheese and more dressing on the pasta, a loaf of french bread and you are good to go. :D

here's what i had last night -- it was a new recipe for us but we liked it a lot. :)

orrechetti with onions and peas

ingredients:
1 tablespoon olive oil
4 onions, chopped
1 lb bag of frozen peas
1 lb bag orrechetti
1/4 cup pecorino romano
fresh ground pepper to taste
salt to taste

1. fill a stockpot with water and set it to boil. when the water reaches boiling, dump in the pasta and let cook until al dente.
2. while the water is heating up, heat up the olive oil in a medium saucepan.
3. when the oil is hot, add the onions. saute until golden on medium-high heat, stirring occasionally.
4. add the peas and add salt and fresh ground pepper to taste. add 2-3 tablespoons of hot water from the pasta stockpot into the saucepan. saute for about 10 minutes.
5. when the pasta is cooked, drain and return to stockpot. add the pecorino romano cheese, mix.
6. serve pasta in bowls topped with onion-peas mixture.

My own little creation!!

2 cup chopped cooked chicken
1/2 cup Sour Cream
1 can Cream of Chicken Soup
1 small Onion (diced)
1/4 cup Plimentos
1/4 cup Milk
2 cup Shredded Sharp Cheddar Cheese
1 pk Frozen Biscuits (Homestyle)

Mix chicken, sour cream, soup, onion, plimentos, and milk in large bowl. Place in 8x8 baking dish. Bake at 375 for 15 minutes. Remove and stir, top with 1 cup of the cheese, then add 4 to 5 biscuits ontop of cheese, split the other cup of cheese to top of the biscuits bake for another 25 minutes at 375. Let cool for 10 minutes.

Kids love this! I sometime add peas as well!

Last night we had vegetarian Moroccan tagine (stew) over couscous. I just threw everything in the crock pot and it was ready when I got home from work. I love that! Plus it keeps the kitchen from heating up.

Trader Joe's (http://www.traderjoes.com) is basically a grocery store that sells lots of interesting products and usually at a really good price. I buy things at TJ's that would cost me sometimes twice as much in the "regular" grocery store. They have a wide selection of frozen foods which are really great for making quick meals. And a lot of their stuff is organic, which I like.

Some of the stuff isn't so great for you (sodium is usually the culprit), but a lot of it is no worse calorie and fat-wise than anything else you'd get... and in many cases, it's surprisingly better...

If there's a TJ's in your area you must go!!!

I grilled halibut, veggie kabobs with a Balsamic marinade, grilled pineapple, and made a mix green salad topped with cooked (real crab)...YUMMY!

I threw some things together tonight, and it ended up as a great meal! I made steamed asparagus and garlic toast to go along with bacon cheddar ranch chicken. Here's what I did to make that:

4 boneless, skinless chicken breasts
8 strips bacon
Ranch dressing
Shredded cheddar cheese

I covered the chicken breasts in ranch dressing, put them in a 9x13 pan and cooked them at 350 for 25 minutes. (In the meantime, I cooked the bacon, steamed the asparagus and toasted and topped the bread.) I put two bacon slices on each chicken breast, then sprinkled a good amount of cheddar on top of each. Then I cooked it for 10 more minutes. It tasted great and was super easy to make!

I made a tomato zucchini tart and a salad. The tart was really easy and quick:

1 tablespoon yellow cornmeal
1 (10-ounce) can refrigerated pizza crust dough
1 cup (1/8-inch-thick) diagonally sliced zucchini
4 plum tomatoes, seeded and cut into 1/4-inch-thick slices (about 1/2 pound)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 ounces fresh mozzarella cheese, sliced
1 teaspoon extravirgin olive oil
1/2 cup torn fresh basil leaves

Preheat oven to 400°.
Line a baking sheet with parchment paper; secure with masking tape. Sprinkle the paper with cornmeal. Unroll dough onto paper; let stand 5 minutes. Pat dough into a 12-inch square. Arrange zucchini and tomato over the dough, leaving a 1-inch border. Sprinkle evenly with salt and pepper. Fold edges of dough over zucchini and tomato (dough won't completely cover the zucchini and tomato).

Bake at 400° for 15 minutes or until the dough is lightly browned. Top with cheese; bake 5 minutes or until cheese melts. Drizzle with oil; sprinkle with basil. Cool on baking sheet 10 minutes on a wire rack.

Yield: 4 servings (6 WW pts per serving)

Homemade pizza with roasted red & yellow peppers, mushrooms and goat cheese. I used the frozen "Bridgeford Bread Dough" for the crust and it was so good! It was $1.99 for 3 frozen loaves of the dough. You can use the dough for pizza crust, rolls, bread, etc. I highly recommend it.

I served it with a salad tossed with a pear vinegarette dressing with gorganzola :p

I really, REALLY find it SO hard to cook in this heat. Week before, we ate out every night. This week we were better in that I at least cooked a couple days this week. We had tuna sandwhiches the other night and then sausage & peppers over penne last night (not so good this time as I used a different kind of sausage and it threw off the consistency and taste a bit). Tonight, out to eat and it better be chilly!!!

Turkey tomato sauce (used fresh farmers' market tomatoes, olive oil, garlic, carmelized onions and ground turkey). Sometimes we eat it with pasta but tonight we had it with whole wheat tortillas.

Pretty yummy and healthy.
