View Full Version : What to do with gnocchi?

I searched online for gnocchi recipes, but all I could find were recipes for making the actual gnocchi. I am looking for ideas on how to serve it. All I can think of is maybe doing some kind of prima vera with red sauce, and perhaps throwing in a little sauted chicken. Anyone have anything better for me?
I like my gnocchi in a pink sauce (basically a marinara w/cream added) w/fresh basil. Super simple and super yummy!

I love gnocchi with just simple (preferably fresh) marinara. For added decadence, perhaps melt some fresh mozz on top. But I'm simple w/ pasta and generally prefer it w/o veggies, etc. in the mix.

I personally like my gnocchi just saucy because I love the texture of the gnocchi itself, and don't want anything to compete with it.
Pesto sauce
Vodka sauce
Smoked salmon (flaked superfine) in cream sauce
Butter and parm
Mmm, I think I know what will be on the menu next week!

My favorite is a fresh and simple mariana with a small amount of fresh mozzerella mixed in (it will melt slightly...), O so good! I also love it with butter and parm cheese; very simple, but incredibly tasty.
Yup, I think I know what's for dinner too. :)

I love it with a butter sauce - either sage or thyme and then top it with some parmesan cheese.

There's a place here in town that serves it with a creamy marinara, mushrooms, peas, artichokes, and italian sausage. It is so good.

Thanks for the ideas! Butter & parmesan sounds good, but unfortunately FH doesn't really like cheese and actually is disgusted by parmesan in particular. It is always a trial when I want to cook Italian.

You can serve gnocchi anyway that you would serve pasta.

You could try a brown butter sauce.
I love gnocchi with brown butter and sage or fresh marinara. We've also made this a couple times, and it's really good.
GNOCCHI WITH GORGONZOLA SAUCE
(Les Gnocchi au Gorgonzola)
2 1/4 pounds russet potatoes
1 large egg
2 cups all purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1 cup whipping cream
3 cups crumbled Gorgonzola cheese (about 13 ounces)
Chopped fresh chives
Grated Parmesan cheese (optional)
Pierce potatoes several times with fork. Microwave until tender, turning once, about 16 minutes total. Cut potatoes in half lengthwise; scoop potato flesh into bowl; discard potato skins. Mash potatoes until smooth. Mix in egg. Sift flour, salt, pepper, and nutmeg over potato mixture; stir to combine. Knead gently. Divide dough into 8 pieces. Roll each piece on work surface into 1/2-inch-diameter rope. Cut dough into 1-inch lengths and make grooves in each piece with fork.
Cook gnocchi in large pot of boiling salted water until gnocchi are tender and rise to surface, about 5 minutes. Using slotted spoon, transfer cooked gnocchi to warm platter. Bring cream to simmer in heavy medium saucepan over medium heat. Add Gorgonzola, whisking until melted. Spoon sauce over gnocchi. Sprinkle with chives and Parmesan, if desired; serve.

This is the recipe i use for a butter sauce:
1/2 cup unsalted butter
1 tablespoon fresh thyme leaves
Cook the butter in a heavy medium skillet over medium heat until it begins to brown, about 2 minutes. Remove from the heat. Add the thyme leaves. Set aside.
Spoon the gnocchi and butter sauce into shallow bowls. Top with the Pecorino and serve.
You can subsitute the thyme for any other herb.

I love gnocchi prepared in something light to balance out the heaviness of the potato. I prefer it with lemon, butter and peas, but since it's fall, i would serve it with butternut squash and butter. Mmmm, I may make that for dinner tonight!

Our fav italian place makes it with a gorgonzola cream sauce.
Our family serves it with a bolognese sauce - yum!

I just saw this really interesting recipe on Everyday Italian the other day. I haven't tried it yet, but it's really simple and looks sooo good, if you like sweet and savory dishes... In fact, I may make it tonight!

1 cinnamon stick
1 package storebought gnocchi
Salt
1 tablespoon sugar, plus more to taste
1 teaspoon ground cinnamon
Melt the butter with the cinnamon stick in a heavy medium skillet over medium heat until melted, about 2 minutes. Remove from the heat and set aside.
Cook the gnocchi in a large pot of boiling salted water until all the gnocchi rise to the surface, about 3 minutes. Discard the cinnamon stick from the butter sauce and reheat the sauce over low heat. Using a slotted spoon, transfer the cooked gnocchi to the hot cinnamon butter in the skillet. Sprinkle with the sugar and cinnamon. Toss to coat and add more sugar, to taste.
Spoon the gnocchi and butter sauce into shallow bowls and serve immediately.

This is soooo good! I made it for some friends as a quick lunch and they raved about it. Definitely a good fall meal :)

I like my gnocchi pan fried in a little bit of olive oil. :) It gets a little crispy on the outside but is still tender and doughy on the inside and is so good. Serve it with a sprinkling of grated romano cheese and some fresh basil.

andrew&shannah - Out of curiosity, what did you serve the cinnamon gnocchi with? I still want to make it for dinner (it sounds sooo good right now) but I'm at a loss thinking of side dishes!

I'm not Shannah :) but I'd serve it with a vegtable. Since the gnocchi are made out of potatoes, I wouldn't serve another starch, but I think a simple, plain veggie would be great.

DH used to order it from this great itallian restaurant when we lived in LA and it was served in a bolognese sauce. It was delish!

Update: I made the gnocchi with cinnamon butter the other night and it was DELISH!! I thought it would be too rich, but it was actually just about right. I served it w/ green beans drizzled with balsamic and hazenuts...it was a rich meal. :p

FH and I came up with a great gnocchi recipe and we tried it out last night- delicious! I cubed some chicken and then sprinkled it with poultry seasoning and browned it. Then I put the chicken pieces in a big bowl with the cooked gnocchi and some peas and corn, and tossed everything with some infused olive oil. The only thing I will do differently next time is make the infused oil further ahead of time- the flavor didn't have enough time to sink into the oil really well. I used a tomato, garlic & basil seasoning mix for the oil, and I made sure to scoop out most of the seasoning at the bottom to toss with the gnocchi.
