My mother always made an incredible zucchini quiche with Bisquick, but I can't eat Bisquick anymore because of a food allergy.

Anyone have a good receipe for a zucchini quiche that doesn't involve Bisquick? I have two pounds of the freshest, tastiest zucchini in my fridge, and I need to make something portable with it tonight!

I don't know exactly what you're allergic too, but here is a recipe that is a bisquick substitute. I've used it before and it works great.

Maybe this bypasses your allergy? :)

Wow, thanks! That's perfect - just perfect.

If anyone is curious :) I ended up using the following recipe:

1 cup flour
1/2 teaspoon baking powder
1 teaspoon salt
3 large zucchini, cut into thin rounds
1/3 cup canola oil
1 cup egg substitute (or 4 eggs)
1 teaspoon oregano
2 cloves garlic
bit of fresh black pepper
1/2 teaspoon onion powder
1/3 cup parmesan cheese

Mix (it helps to mix all the ingredients except zucchini, then fold in the zucchini), pour into a greased 13X9 pan, bake at 350 for 35-40 minutes.

It is SOOOO tasty. My only concern is that it needs a little more batter, so I might use 1 1/4 cups of flour next time.
