Not sure if this is the right place to put this...but...my doctor put me on a Low-Fat/Low-Cholesterol Diet and I am running out of ideas of food to prepare...

HELP!! I need recipes!

I love my Betty Crocker Low-fat, Low-cholesterol cookbook:

There are very few cookbooks from which I make so many recipes. My favorites are the london broil, three-grain patties with mushroom sauce, and apple-cheese pancake. I haven't tried any of the desserts, though.

I have the 1996 edition, so I'm not sure what, if anything, has changed in more recent versions.

So I just got the results of my recent lipid panel and my bad cholesterol level came back at 256. :eek: I don't want to start taking pills at age 30, so I took a long hard look at my diet and made some changes. I am concerned that this won't be enough because I do have a family history of heart disease/high cholesterol, but since my health is at stake, I am willing to try.

So, I have replaced the skim milk with low fat soymilk, cut out all cheese except soy cheese and found a delicious nonmilk ice cream. I have also increased my intake of fruits and veggies, replaced some of the lean beef with beans, and started eating oatmeal for breakfast. I have found a flavor that I like and if I slice a banana into it, it's filling enough.

The meal that I have the most issues with is lunch. I like to eat something warm and filling, and the company caf makes it tough. Unless I bring my own food, it's a problem.

I am planning on making stuffed peppers and stuffed cabbage with rice and soy crumbles instead of my usual ground beef, and I have been researching fish options.

DH has also been very supportive. I didn't want to get into the habit of making 2 meals, so he's been eating what I eat!
