View Full Version : what's on your 4th of july bbq menu?

we're going to my parents on saturday - and we are doing more of a clambake than a bbq. my parents are providing the lobsters and steamers. my sister is bringing salmon and shrimp for the gril. i'm responsible for everything else - i'm bringing corn on the cob, a watermelon, tortellini salad, and something (tbd) for dessert.

so i'm trying to think of ideas for what to do with dh and dd on tuesday - just the 3 of us.

We just decided to have a get-together with my parents and inlaws. We're going to have brisket, potato salad, cole-slaw, possibly baked beans and some sort of dessert - probably fruit of some sort.

DH has a great recipe for brisket from a local Barbecue place here in town. It cooks in the oven and ends up SO tender.

Not quite sure yet, but either we'll do a fish fry or a mini rib fest. I have to check with DH. I'll come back and post when I know more.

not entirely sure but maybe burgers, cheddar brats, corn, pasta salad, cole slaw (from a mix), lemonaid...


mmmmm I am getting hungry just thinking about it!

Tons of fresh fruit
There is a recipe for this cake called Zambelli cake (the fireworks family) that is made with ricotta cheese. I think I will make that as well.....

There are a ton of summer recipes in the new Cooking Light that I want to try over the holiday... some "improvements" on tried-and-true recipes as well as some newbies.

You know, I can't help it...but I love those thin, frozen hamburgers you buy in bulk. Throw them on the grill, add some cheese...mmmmm. Nothing says 4th of July to me like those.

We are going to a party where everyone is bringing a dish so I'm not sure. We're bringing a large veggie tray and Mike's hard lemonade to drink:D. Main course will most likely be barbeque.

Today we are having friends over for dinner. DH is making a mexican casserole, I'm making sangria, and then lemon cake for dessert.

I made the stars and stripes pound cake with strawberries, blueberries, and whip cream one year. It looked beautiful and was very good but too much cake for only a few people.

turkey kielbasa, sauerkraut and spicy mustard (turkey hot dog for DS)
potato salad
corn on the grill
homemade vanilla ice cream with raspberry sauce

I think we'll be doing the basic hotdogs/hamburgers/brats with grilled corn on the cob, baked beans, slaw and pasta salad with some type of dessert.

FH is in charge, and he's a great cook, so I'm looking forward to it!

He's making:

Tropical salsa (pineapple, mango, papaya, red onion, cilantro, rice vinegar, and something else), to serve with chips
Jalapenos wrapped in bacon and stuffed with cream cheese, cooked on the grill
Fish packets on the grill (with onions, garlic, white wine and a bit of butter)
Chimichurri chicken breasts (also grilled)
Turkey kielbasa
His "special" potato salad with grated carrots, red onion, fresh herbs, light sour cream and mayo

Yummmmm! I have to think of something to make myself for dessert, but other than that, we're set for a day of food, water fun, and our town's awesome fireworks (a few blocks from our new house.) :D

We're going to a BBQ today and the hosts are providing the meat (hotdogs, brats, hamburgers) and the keg. The guests are to bring the rest. We're bringing Carmel Apple Salad and Red and White Cake. DH doesn't like a lot of salads-- potato, cole slaw, macaroni-- so I try to appease him by bringing things I know he'll eat.

I'm trying a bunch of recipes from the Food Network.
-Honey mustard and red onion BBQ chicken (Rachael Ray)
-Beer brats and kraut (Sandra Lee)
-Corn on the cob with chili and lime (RR)
-Marshmallow-nut brownies (RR)
-Pasta salad (from a box :D )

Pork slow roasted on the grill and then glazed
Grilled mixed veg
Grilled corn on the cob
Rice & Green Chilie casserole
Watermelon

I may make something decadent for dessert ... we'll see how I feel this evening.

our clambake was awesome on saturday. 9 people went thru

* 15 lbs of lobster
* 5 lbs of mussels
* 4 lbs of littlenecks
* 2 lbs of shrimp
* 3 lbs of steak
* 1 lb of hotdogs
* 1 lb of tortellini salad
* 1.5 dozen corn on the cob
* 1 dozen cheddar sourdough rolls
* plus 2 desserts!

dh and i didn't even eat yesterday we were so full! i swear i still have a stomach ache today!

so tomorrow we are just going to have bbq boneless chicken breast, watermelon and corn on the cob. with a strawberry rhubarb pie for dessert.
