It was pretty good....The pasta salad was one of those Suddenly Salad box mixes (the Parmesan flavor one). It wasnt bad for a box thing like that. I had never tried them before, but my friend loves them so thought I would give them a shot.

Homemade spinach pie with caprese salad.
I was so excited because this is the first time in well over a year that I really cooked something (DH has been unemployed and doing most of the cooking) and I finally used my tart pan that I got as an engagement or wedding present 5 yrs ago. Th e pie looked sooo pretty and now I am over my fear of fillo dough having managed to use it once without issues.
Unfortunately the main reason for making it was to get my son to eat some spinach. He does not like it plain but has gobbled it up in resturants as a pie or creamed. My recipe was too spicy for him. :( Luckily he seemed to still be willing to give it another try. He asked me to "cool" it down so he could have some and tried a bite mixed with yogert that he did not spit out. The recipe is pretty healthy, only a 1/3 cup of feta cheese and a few tablespoons of oil for fat (absent what might be in the fillo dough), so I will probably be making it again.

Golden Parmesan Potatoes

(The real recipe is from Kraft's Food and Family (http://kraftfoods.com/main.aspx?s=recipe&m=recipe/knet_recipe_display&u1=keyword&u2=golden%20potato%20parmesan&u3=**1*1&wf=9&recipe_id=55620) magazine. But when I make it exactly to their measurements, i.e. with less butter/parmesan and the chives only as garnish, the potatoes end up dry and lacking flavor).
6 cups Yukon gold potato slices (about 6 medium large potatoes), about 1/8 inch thick (Get a mandolin from BB&B. That way the slices are even so the potatoes cook evenly. Slice them the short way, not the long way.)
Butter (I use Country Crock.)
KRAFT 100% Grated Parmesan Cheese
Chopped fresh chives
1. Preheat oven to 425°F. Slice potatoes, and pat them dry.
2. Take a 9-inch pie plate, and grease it liberally with butter. Make sure to get the sides of the pan (I just grab a couple tablespoons and use my hand, makes it so much easier to get it in the corners). Sprinkle the empty pan with grate parmesan cheese, until the entire surface is well coated. (Kind of like how people who bake do this with flour).
3. Take roughly a cup of butter and melt it in the microwave. Don't let it get too hot.
4. Dip a potato slice into the melted butter, then place in the bottom of the pan. Create a flat layer with as few holes as possible (but they're going to happen since potatoes are odd shaped). Then start another layer (Try to cover up the holes of the previous layer, sometimes I'll break a potato slice in half to get to the weird shaped empty spots). Don't worry if it isn't perfect! After 2 layers of slices, sprinkle some parmesan cheese (for a nice coating) and some chives. Two more layers, repeat with the chive and cheese.
5. When you've used up all the potatoes, don't sprinkle parmesan cheese on the top (if you do it before putting it in the oven, it can and will burn).
6. Bake for an hour. About 30 minutes into it, brush a little melted butter on the exposed/browning potatoes. 10 minutes before they're done, do the same and sprinkle some parmesan--it'll brown and not burn with that little time left.
7. When it gets out of the oven, run a butter knife around the side to loosen it from the pan. Invert the pan onto a serving plate immediately. For some reason, the good, golden crust (first layer of potatoes) will stick to the pan. No worries, it can easily be loosened with the butter knife and will come off in 2 or 3 HUGE pieces.
8. Cut into wedges to serve.
PS--Mine never looks as perfect as the picture above. But no one will care--it is SO good! I'm partial to the Yukon Gold because it has a much more buttery flavor than regular Russetts.

Another new recipe from the same old magazine. Such fun after doing the same old same old for so long. There was nothing in the fridge and I remembered seeing a frittata recipe when I was making the spinach pie so looked it up and DH made it while I entertained our cranky 2 y/o. It came out really well. Can't wait to have a brunch so I can show off these two dishs.

Grilled burgers and hotdogs, amazing grilled corn (DH said adding just a bit of corn to his made it taste like butterscotch), homemade coleslaw (needs another day to sit),baked potato, wine and watermelon.
Here is the Spinach Pie recipe, though maybe you thought it included a recipe for fillo dough? If so my appoligies for misleading you. Fillo itself scared me becuase of the whole fear that it would dry out while I was still working thing.
Classic Spinach Pie
2 pounds fresh spinach trimmed, washed and chopped, or 32 ounces frozen -I used frozen.
4 tablespoons olive oil
2 cups coarsely chopped onion
1 1/2 cups chopped fennel bulb (I used anise- are these the same)
1/2 cup chopped dill
1/3 cup crumbled feta cheese
1 tsp salt
1 tsp freshly ground pepper
1/4 tsp cayenne pepper
(If you don't like a real bite cut back on the pepper)
Pinch nutmeg
1 large egg
1 large egg white
14 sheets phyllo dough
1) Preheat oven to 350, lightly oil a 12 inch tart pan or pizza pan or coat with nonstick spray
2) Heat a large skilletover medium high heat. Add spinach with the water still clnging to the leaves and cook stirring, until just wilted. Transfer to a collander to drain and cool.
3) wipe skilletdry. Add 1 TBSP oil and heat over medium -high heat, add onion and fennel and saute until softened, 5-7 minutes
4) Squeeze out any excess water from cooled spinach. In a large bowl, stir together spinach, onion/fennel mixture, dill, feta, salt, pepper, cayenne and nutmeg. Lightly beat egg and egg white together and stir into spinach mixture, set aside.
5) Lay a sheet of phyllo on a work surface;brush it lightly with some remaining oil. lay a second sheet on top of the first at a 45 degree anglle. Brush with oil. Repaet with 5 more sheets to form a rough circle. Lift stack of phylllo and transfer it to a prepared pan, pressing it gently into the bottom and sides. Spread filling evenly over the top.
6) To make top crust, lightly oil and stack remaining 7 phyllo sheets in the same manner as the bottom crust. Set on top of the filling. With scissors trip the edges leaving a 2 inch over hang. Roll edges over to form a rim and and brush lightly with oil. With a sharp knife cut 4 small slit in teh senter of the pie as steam vents.
7) Back for 50-60 minutes, or until crust is golden. (if pie is browing too quickly cover with aluminum foil) Let pie cool about 10 minutes before serving.
Makes 8 servings - 180 calories a serving, 7 grams of protien, 9 grams of fat,(2 grams saturated fat), 18 grams Carbs, 530 mg sodium, 31 mg cholestol, 4 gram fiber.
baked up to 2 days ahead and refrigerated. To reheat, cover with alumnium foil and place in a 400 degree oven for 15 mintutes. (Warning this is what the recipe says, it was still not very hot when we ate it.)

Thanks, that spinach pie sounds great. The recipe I have makes me layer the phyllo constantly, which I can't handle :). A top layer and a bottom layer sounds more do-able!

Bookworm - Glad to have been of help. I hope you like it. It is supposed to be a "healther" version. It is from Eatting well Mag. and I really like their way of cutting down on bad stuff but not to the point that the food loses its point. Like they will have a dessert with 300 cal and 15 grams of fat, but the original would have been 700 cal and 30 grams of fat. Anyway, we liked it other then it being too spicy for a toddler. We will make it again and leave the red pepper out. We can add hot sauce later if we want.

Came home from a weekend at the beach yesterday afternoon and then had family over for dinner -
Huge steamed shrimp - stopped at a fresh seafood "shack" on the way home from the beach and bought these. I steamed them myself and they were so good.
Fresh corn on the cob - stopped at a produce stand on the side of the road, they had literally just picked the corn from the field.

Chicken breast tenderloins dredged in a mixture of flour, Spice Hunter's Tandoori Blend, and a touch of salt and pepper. Cook in 1 TBL olive oil over med-hi heat in a non-stick pan until well browned and done. Yum.
Also made Tabouli salad
1 1/2 cups bulgar wheat (I use Red Mill's Light)
1 cup boiling water
1/4 cup olive oil
2/3 cup fresh lemon juice
1 bunch fresh parsley leaves chopped
8 to 10 fresh mint leaves
2 garlic cloves well minced
1/4 tsp (slighly mounded) ground cumin
1/8 or so tsp of turmeric
1/8 tsp of chili powder
1/2 tsp salt
freshly ground pepper
1 - 2 cucumbers, seeded and chopped
cherry tomatoes - quartered (lots of them!)
Place bulgar in a fairly good sized bowl/container. Add boiling water and soak for at least 30 minutes in fridge. Add remaining ingrediants and refrigerate for at least 4 hours prior to serving.
I also made orange jello! ;)

We had london broil sandwhichs, DS did not like it and had left over hamburger and corn on the cob.
Tomorrow we are trying something new. Articoke chicken. Tonight I prepped chicken cutlets and cut up some marinated articokes, peppers and olives. Tomorrow we will fry up some onions and garlic, add the rest of the stuff and may be some wine and chicken broth for a sauce, maybe some canned tomatos. Hope it tastes good.

We had the articoke chicken with egg noodles and it came out really good. My preschooler even asked for more, though I had to remove all the extras from the chicken for him. He tasted the extras to the side. We will definately make this one again. We decided that grilled asparagus would go really well with this. And since we cooked with a bit of wine we had wine with dinner which was also very nice for an inexpensive bottle.
Tonight is either grilled fish or articoke frittata. I was supposed to make enough of the chopped up marinated vegis for both the chicken dish and the frittata but I did not.
