Sure, her recipes are normally uber-fattening, but isn't 'Paula's Home Cooking" show on the food network great? I've tried a few of her recipes and they all rock. I tried this one yesterday...Chocolate Delight (http://www.foodnetwork.com/food/cooking/recipe/0,,FOOD_9936_31205,00.html). My version was slightly varied...I used cool whip instead of homemade, chocolate chunk cake instead of devil's and no nuts.

and my grandmother always used to make this one...Strawberry Mold (http://www.foodnetwork.com/food/cooking/recipe/0,,FOOD_9936_26736,00.html). My version is nutless...

Any other Paula fans out there? Share your faves!

I love Paula! She is so cute - so much fun to watch. I make her Gooey Pumpkin Butter Cake every Thanksgiving. So good!! :)

I second the Gooey Pumpkin Butter Cake!! It is awesome! I also wanted to add her really fattening french toast bake!! I think the topping has a whole lb of butter just for the topping Puts a smile on my face everytime :)

My garden has been shooting out squash faster than I can eat or give it away.

I found this Paula Deen recipe last week and have made it twice in the last 5 days. It's really good.

SQUASH CASSEROLE

6 cups large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
1 teaspoon House seasoning, recipe follows
1 cup grated cheddar cheese
1 cup crushed butter crackers (recommended: Ritz)(saltines are great too)

Preheat oven to 350 degrees F.
Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.

In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups

I love to watch Paula Deen! I really like how she is always talking about her family and restaurant. She always seems so genuine on her show and she is so much fun to watch!

I've always wanted to make some of her recipes but I never to think to come print them out. I love seeing suggestions on recipes that you guys have tried, keep them coming! :)

Ohhh...my grandma makes that squash casserole and it is delicious! Pineknot~ How great that you have a productive garden! We have lots of tomatoes in pots this year but definitely want to have an in ground garden next year.

Also- Paula's "Not-Yo-Mama's Banana Pudding" is fantastic! It's very rich - it has cream cheese and whipped cream in it - and I'm sure some butter somewhere :) but it is very yummy!

I've only tried the baked spaghetti and the french toast bake. I thought the spaghetti was a little bland, but the french toast bake was great. Of course I ate most of it myself b/c DH thought it was too sweet (as though the toppign wasn't the best part).

She makes foods with stuff you have in the fridge/pantry, which is great. I hate spending my time running around town looking for rare mushrooms and spices that are nowhere to be found.

This is my pet peeve too! DH and I don't have a lot in our house because he works too much to keep items that spoil fast here, so I don't mind having to do a quick store run for some things. But I get so annoyed when I look at the ingrediants and realize I would have no idea where to even start looking for something on the list!

Love her!

I've made her twice baked potatoes w/ Shrimp, trifle and banana cream pie. They were all very good.

I love watching her show and reading her cook books... makes me drool every time.

My friend just returned from a trip to Savannah and she ate at her restaurant- The Lady & Sons. She said it was out-of-this-world! :D

I am a huge fan of Paula Dean! I make her pumpkin gooey batter cake every Thanksgiving. I also love her strawberry pretzel salad, not yo mama's banana pudding and recently I have been making her corn casserole. It's a can of cream corn, can of whole kernel corn, sour cream, butter and a jiffy corn muffin mix then melted cheese on top. It is to die for!

I'm hungry...... :p

Not only do I love Paula, I also love looking at her sons :D I have tried her not yo mamma's banana pudding, fried chicken, etc. All of her recipes are to die for. I want to get a trip going to Savannah and go to one of Paula's cooking clinic's. They look to be a lot of fun.

Count me in! I love Paula too. She's entertaining, and I like it when she takes her little trips. Of course, her sons are an added bonus. :D

I can't say I've tried any of her recipes, but I'm making lasagna tonight that was inspired by hers.

Ok I'll admit it, I have DVR (like TIVO) and I record her shows becasue her voice relaxes me!! If I watch it before bed, I go right to sleep :D She had an episode on the other day about family members who have passed, but left their recipes. The red velvet cake looked fantastic. I have never had red velvet cake, but I so want to try it now!

I LOVE Paula!!! I've started Tivo-ing the program too, and my favorite thing is to watch it with DH. I always say "Hey y'all!" before pushing play and DH cracks up and says I sound just like her. Even though I never quite had a Southern accent (originally from east coast FL, home of the non-accent, but lived in Louisiana), I can still let out a good Y'all every now and then.

Anyway, that show definitely makes me feel like I'm home in the South. I'm currently on Weight Watchers, but I told DH Paula makes me want to lose all the weight I can, then maintain at about 10-20 pounds above that, just so I can enjoy some butter, sour cream, and fried chicken.

Beth--I saw the show about her grandmother's recipes too. Paula got all teary and it was so sweet! Not to mention I actually salivated when I saw the chicken. :p

I think Paula Deen is my favorite Food Network show - I love 30 Minute Meals but Rachael Ray can get a bit annoying. LOL

pineknot: I just made that squash casserole the other night because we had like 8-9 squash from our garden sitting around. YUM. I'm not normally a squash fan, but sauteeing those onions in that butter smelled SO.GOOD. to this pregnant lady! :p

DH and I counted once, and throughout one entire show/meal she used at least 6 sticks of butter. LOL!!

We used to live in Charleston and have been to Savannah a number of times but have yet to get to eat at her restaurant. We were there for our first anniversary but ended eating at the restaurant next door - which was great, too! Paula's place was booked solid!

Subscribing! I saw her on one of the talk shows recently and keep meaning to watch her show. I did see one episode about barbecue. I used to live maybe 45 minutes from Savannah, and I never made it to her restaurant. I've heard it's always packed with people. I think my MIL said she's met her before and that Paula is very sweet.

Paula is one of my favorites too.

So far Ive made her Mini Cheesecakes (cant remember the exact name) and the Not Yo Mamas Banana Pudding.

The cheesecakes are a huge hit! The Banana Pudding I thought was good too but DH didnt care for it. It is very sweet!!

Has anyone tried the Squash Casserole with a mixture of squash and zuchinni??

Everytime my mom comes down to visit and we turn on Food network she always comments about "the butter lady" and wether her show is on!! :)

Her show is my favorite and I keep my TV on either Food Network or HGTV!
I have made her rice pudding and Lady and sons cheese and onion bread. I have a lot of her recipes saved so I can make them!

I just made Paula's Mystery Pecan Pie the other night and it was soo yummy! I'm not even a big fan of pecan pie and I couldn't stop eating it. :)

I think it's even better made with two kinds of squashes. I have also used patty pan squash with zucchini and yellow.

I heart Paula! I need to get one of her cookbooks. The one recipe we have tried and that everyone loved is what I think she calls 'cracker salad'. It's basically saltines, mayo, and some veggies, and it sounds bleh but OMG! It's SOOO good!

I was sent here to look for a fattening, decadent, easy, yet yummy dessert to make for my FIL this weekend - we have doctor's orders to fatten him up. My goal is just to keep it relatively simple and very tasty.

I checked out the Chocolate Delight and the Double Chocolate Gooey Butter Cakes, and both sound incredible. Anything anyone else can recommend?

Since we're ordered to fatten him up, I might also try the rice pudding in a week or so. So I'm also open to any other ideas of things to keep around him to munch and snack on.

I think it's awesome that Paula's getting her own magazine. Now with Rachel, that's another story. I do like Rachel but I am soooo tired of seeing her. She has 3 t.v. shows, millions of cookbooks, and now a magazine. Enough is enough.

I have to admit, when I first read that she was getting her own magazine, all I could think was how the cholesterol levels of her subscribers will be going up at least 50 points. I love her cookin' but she uses more butter than anyone I've ever met!!

I ate at Lady & Sons last December (a wonderful time to visit Savannah!) - it was wonderful - I think we had cream of asparagus soup, fried green tomatoes and fried shrimp. We went at lunch time and waited outside with a crowd before the opening bell - no trouble getting in - we did have to wait in a line. There was also a buffet option. Next time!

Yet again CC turned me on to something new - I had never heard of Paula Deen before but since reading these posts, she's now on my TIVO list :D

So I thought I'd share my first Paula inspired meal... the other night I made fried pork chops using the seasoning she suggested for Ol Jack Sweet Potatoes and Roast Pork and the cooking method for Lady & Sons Pork Chops - they turned out wonderful!

2 Pork Loin Chops (extra thick)
Seasoned with:
Pepper
Garlic Salt
Soy Sauce
Brown Sugar (my own addition)
Doused with Jack Daniels
Marinade for about 2 hours

Heated about 3 T of oil in pan
Add floured pork chops and fry for about 3 minutes until flour crisps up - then poured remaining marinade into the pan with a little water (this created a beautiful glaze on each chop) - covered and cooked for about 15 minutes.

They had a little bit of an asian taste and were so moist.

Served with mashed sweet potatoes and biscuits - Yummy!

DH and I LOOOOOOOOOOOOOOOOVE Paula. She's like some crazy aunt that every family seems have! I love how she laughs at herself as she puts in yet ANOTHER cup of mayo, stick of butter or spoonful of sour cream. One time she made hoecakes (basically cornmeal pancakes) which she fried in a good half inch of butter and then poured even more melted butter on her serving before eating them. Lordy, I got heartburn just watching it.
When she did an episode of "The Next Food Network Star", she said that her producer was always telling her to take lady-like bites instead of the big, honkin' chomps she does. She's an absolute riot and doesn't apologize for liking food.
I think her kitchen is so homey and love when she does outdoor shots around her house. She's got a gorgeous porch and backyard. I want to spend a weekend at her house, if it is her house and not some "loaner" for the show.

I made Paula's quiche last night (well a version of it) and it was SO~O good! Very fluffy - it set up perfectly (no runny texture).

My variation:
Instead of spinach I used fresh broccoli (chopped) & added fresh mushrooms (sliced thin). Served with sauteed asparagus.

A tip:
Use a deep dish pie crust if you make this. Otherwise cut the recipe by a third (I ended up not using almost half). I also cut the heavy cream to 1 cup instead of 1 1/2 cups.

Spinach and Bacon Quiche Recipe courtesy Paula Deen

Recipe Summary
Difficulty: Easy
Prep Time: 15 minutes
Cook Time: 45 minutes
Yield: 8 servings

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

The food was so good yesterday!

For dessert, they had her Ooey Gooey Butter Cake made with pumpkin. It was really good and would make an excellent addition to a Thanksgiving meal or fall menu.

My sis's bday was on Thursday and her friend made her PD's coconut cake. You can get the recipe from the food network page. Anyways, if anyone is a coconut fan, this cake is so delicious!!!

I made her Chicken Spedini (it was good) and her Hot Chicken Salad Casserole (I think that's the name) and it was t die for. I've made it twice so far, DH loves it and it's good cold the next day too.

My Mom called me yesterday that she got me one of her cookbooks. She's working in Kansas right now so I was all sad I wouldn't be getting it from her for a while but she called today and said she was coming home tonight. I was like yay, I get my cookbook now, oh yeah and I get to see you too :o .

I love Paula Deen! She's so sweet and funny, and her life story is amazing. We're going on a short honeymoon to Savannah in May or June, and I'm going to try and take one of her cooking classes!

Her mini cheesecakes with the peanut butter cup inside are SO delicious. DH loves peanut butter and chocolate, and these were so perfect. I can't remember the name, but it's on the FN website if you search her show for cheesecake.

This is my favorite Paula Deen main dish:

Chicken in Wine Sauce

4 large skinless boneless chicken breasts
6 ounces Swiss cheese slices
One 10 3/4 ounce can condensed cream of chicken soup
1/4 cup white wine (more if desired)
Salt and pepper to taste
1 cup herb-flavored Pepperidge Farm stuffing mix, crushed
4 tablespoons (1/2 stick) butter, melted

Preheat oven to 350 degrees. Place chicken in shallow buttered casserole. Layer cheese on top. Mix soup, wine, salt, and pepper; pour over cheese. Sprinkle stuffing mix on top and drizzle with melted butter. Bake for 45-60 minutes.

For those of you that make the Gooey Butter Cakes...

If i'm heading over to my FIL's tomorrow around 2:30 (approx. 30 minutes travel time) would you make the cake tonight, chill it, slice it and plate it up for tomorrow OR would you just wait and make it tomorrow before you head out?

I don't think it really matters, but I'll be making the double chocolate one.

I think it tastes better also when its been chilled. I thought the pumpkin one was better chilled and cooled than hot and/or warm from the oven.

I made the 5 minute fudge recipe out of "Savannah COuntry Cookbook" and it wasnt that great...I threw most of it away.

Im thinking about making the red velvet cake for a new years party. Has anyone tried it? Ive never even had red velvet cake so I dont even know what it tastes like in general.

I'm back and both recipes were a HUGE hit on Christmas...

The Sour Cream Pound Cake is a bit sweet but it tastes really good... no diet recipe... you have to go all of the way ;)

The appetizer... Black Pepper Shrimp was another big hit. My suggestion is to get medium to large sized shrimp and use alot of pepper for the taste... but the melted butter & garlic do the trick itself...

I made Paula's Fresh Apple Cake.

It was pretty good, not the best Apple Cake ever and did not need to cook an hour and a half! It was slightly burnt at an hour!

I also think its hilarious that she uses 50 gallons of butter per recipe. :) I just want to give her a hug~ I will def. have to check out her magazine.

Hi ladies,

I was watching Paula today and she made Caramel popcorn that looked awesome. I bought stuff to make it, but was wondering if anyone made it before. It calls for 8 quarts of popcorn--does anyone know how many cups that is? Also, I bought unsalted butter, since I thought the salt from the popcorn, plus from the butter, plus there's salt IN the sauce itself would be too much. I couldn't find "natural" popcorn to save my life tonight, so I got Fat Free butter thinking that might cut down on the butter and salt from the popcorn itself. Anyone have any advice/suggestions?

I checked a conversion calc online, and 8 quarts is 32 cups, or 2 gallons... does that help? I assume she means already-popped corn, otherwise that'd be a lot of kernels. :D

Has anyone made her Curry Chicken Salad or Brown Sugar Chewies? Saw both of these on TV yesterday and they sounded good. Also, the chicken salad calls for mango chutney... is there anything you can you as a substitute for that? I'm sure I can find chutney, but it only takes a tablespoon and I don't know how often I'd use it after this recipe.

Ok, I must have been in a hurry--it calls for 2 quart=8 cups. ETA again: It actually DOES call for 8 quarts. Which would be 32 cups! That seems like way too much (see below for what I did):

FWIW, I made it with one bag of microwaved popcorn, which was about 6 cups, and halved the recipe and it was perfect. Actually, it was to die for. For those who like caramel corn, you have to try it--it's really easy! Only annoying thing is it has to "bake" for 1 hr and you have to stir/toss it every 15 minutes.

I love Paula's show. I've made so many of her recipes. I think my all-time favorite of hers is the Lemon Blossoms. OMG!! It is to-die-for!! You must make it if you like lemon bars or lemon cooler cookies. These little lemon muffins are divine!!

I've also made her Ol #7 Candied Yams, Shrimp Dip, and a few other things. Everything has turned out really really well.

One thing I had a bit of an issue with tho ... she has a "Cooking With Paula" class that you can take at one of her restaurants (Lady & Sons or Uncle Bubba's Oyster House - I think her brother owns the latter). I thought that would be SUCH a cool girls trip - go down to Savannah .. take a class with Paula....
Well guess how much it is PER HEAD for this class? $250. That is for a single 4 hour class. I'm thinking "Wow is that for a 16 week course? Does it include an overnight stay somewhere?" No and no! Just the class, "samplings" of the menu items, and an $18 gift cert to use at Lady & Sons or Uncle Bubbas.
Sure it's with Paula Deen so I can see why the class would be pricey. $100 pricey I can understand. Even $150 pricey I could understand. $250 pricey? Not so much.
They advertise the class as "intimate" but if you read the fine print you'll see maximum class size is 60. Not *all* that intimate if the class if filled!
I just don't get it.

Old thread, but I finally made the salad tonight and it turned out really nice. I halved the recipe (basically) and it still made a lot. I also was able to find goat cheese for a decent price so I used it. It's my first experience with goat cheese.... I love the texture but I'm not so sure on the taste yet. I'm not a huge fan of soft cheeses though, something about the aftertaste.

But yeah, all in all it's a great salad for summer. I may make it again next week for a food day at work, it has a good flavor that would appeal to most people.

I watched her this morning and she did a breakfast in bed show. Her DH Michael wanted to serve her breakfast in bed, but she did all the cooking. Those two are just the cutest. ;)

All of the recipes looked awesome. I can't wait to make all of them. She did a Cinnamon Breakfast Cake, Spinach and Mushroom Pinwheels, and a German Apple Oven Pancake. YUM!!

It turns out they are filming her show in this restaurant now and we saw where they have the set all ready to go. They said she starts filming the new season this week. Apparently her neighbors got tired of all of the equipment. Our waitress pointed across the marsh and showed us her house and said Paula's in the restaurant all the time and is really nice to everyone. She's pretty much to the point. Our server did say that one thing a lot of people don't realize about Paula is that she's a chain smoker. Whenever she's not filming, she's smoking. I found that interesting and then realized why there's so much butter in her food. As a former smoker, I know you have to add extra seasoning and butter to taste it since smoking kills your taste buds.

On our way out of the restaurant, we saw her husband Michael picking up some food to go. Some tourists were talking to him and he followed him to their tour bus and talked to everyone on board. I thought that was nice of him.

Cool story....I could tell she smoked from her laugh. I know a chain smoker's laugh anywhere. I just didn't wanna believe it though.

I went to her restaurant last summer and the wait was so long that they stopped taking names. They told me to come back for dinner. I couldn't because I was there for a conference. Guess I'll have to go when I go back to Savannah. DH and I are probably gonna go for a weekend getaway this fall since it's only about a 3.5 hour drive.

My neighbor across the street got a free copy of Paula's magazine somehow. She gave it to me since she likes to cook healthy. It had tons (maybe 70) of recipes in it. I'd prob buy it the next time around.

I love Paula's magazine. Heck, I love everything Paula Deen. My mom works in downtown Savannah and has heard lots of stories about her, good and bad. One of her co-workers actually dates Paula's younger son, Bobby I think.

We had friends over last year for a BBQ and I made the entire show for the evening. The rib eye steaks with the dijon and peppercorns, baked potatoes with the ring tom ditty and the corn wrapped in bacon. It was by far the most delicious meal I have ever cooked on the grill. Everyone raved that it tasted like a meal from a restaurant. I highly recommend the menu!!!

I knew something would happen with her sons and a show. They were on her show wwwaaaayyyy too much in the past months. However, the show from last week (I think) where she made the finger foods for Jamie and Brooke's anniversary was slightly awkward at the end. It was strange.

I'm sad that she won't be filming in her own home anymore. I think that's part of its charm -- you feel like it really is her "home cooking".

I think she is filming in her own home now. The house she was in previously was not her home. I think it was her producers home in New York. The reason she didn't film in her own home in Savannah, GA is b/c the kitchen wasn't big enough. As soon as she finished building her new house they started shooting all of the shows there. At least that is what she said in her magazine.

After reading some of the reviews, I cooked it for 45 minutes rather than 60. 45 minutes was just about right, I might even cook it a little less if I make it again.

I'm also disappointed that she won't be filming at her house next season.

Paula is a riot. She was soooo funny on the show where Food Network planned a wedding for a couple in Vegas. She was telling the bride about married life and how she got herself a "younger" man b/c Michael is like 7 or 8 years younger, and then she giggled and said, "I got myself a boy toy." LOL!! :D

She still seems to be good friends with her ex-hubby. On her show that comes on Fridays, "Paula's Party", she did some kind of tribute to people that have made a difference in her life like friends and family. He was one of those people. She said something like, "Though we couldn't make it as husband and wife, we've done a much better job as friends." And then she introduced him to the audience. I thought that was pretty interesting....

Her parents both died by the time she was 23 and as a result she developed a fear of death which led to chronic agoraphobia. She was a proficient Southern cook, a talent she used to help her deal with her condition. In 1986, she felt well enough to take a job as a bank teller. She was robbed at gunpoint the next year, and that incident led her to deal with her agoraphobia head-on. After the family moved to Savannah in 1989, she decided to parlay her cooking experience into a catering service. She would make sandwiches and other meals, and her sons would deliver them.

The Bag Lady, as the business was named, was wildly successful and soon outgrew her kitchen. She was hired by a Best Western hotel in Savannah to cook meals, where she worked for five years. The hotel restaurant struggled at first, but it turned around after Deen opened a buffet line there. The stress of working all the time at the restaurant and on The Bag Lady strained her relationship with her sons, and she ended up divorcing her husband in 1992.

Holy crap!! It sounds like life was pretty rough for Paula in her early adult years.

It is not frying well. I use same cast iron that she uses. I have a hard time keeping my oil at 350. It raises and falls so I have to keep an eye on it. Plus the chicken burns on the bottom before I can turn it. Do you think I should use a basket in the pan?

AirForceLove, I'm no fried chicken expert, but have you tried getting the oil up to 375 or so and then putting the chicken in? If the chicken is cold, it will drop the temp of the oil as soon as you drop it in. Of course, I don't know how you get the temp to stay at 350.

Her fried chicken is the only way I have been able to make it. I get the oil up to 375 so that when the chicken goes in it comes down to 350. Until I bought the fry thermometer, my fried chicken was always burnt on the outside and raw on the inside.

Just for a couple of examples, there's a 10-year affair with a married man, much cursing, sex, and just general hardships that most of us probably had no idea about. She is incredibly honest, and puts it all out there, and honestly, I kind of admire her even more. Absolutely nothing has been handed to her.

She was supposed to sit on the stage, but told the hosts that she wanted to be "out there with the ones she loves." Those were her words.

I also read her book in 2 days. I honestly could not put it down. What a compelling story. She really put it all out there...the good, the bad, and the ugly. If you haven't read it, be sure you do. It's a wonderful story that any woman can identify with.

I love Paula Deen, and my DH has never complained (nor has his dad) about any of the meals I've fixed out of her books.....

Just make sure you use your stick of butter ;) Seems like every one of her recipies call for a stick of butter :)

Love, Love, Love Paula's shows. She is so sweet and genuine. Plus I love that she is not the typical cooking show host who is a size 1. She looks like she really eats the things she makes. The pumpkin gooey butter cake is wonderful.

For all of you Paula lovers, I just received her newsletter and it said she will be appearing on Oprah again this Thursday May 3rd. I will definitely be setting my DVR since I missed her last appearance!

Don't fret much over the Oprah show. Paula was a judge for the along with Carson for a group of women's cool inventions. She didn't get too much airtime, but when she did, she was really funny.

I'll be sure to tune into Rachel Ray tomorrow. I'm on vacation, so I'm sure I can catch it.

I'm another Paula fan. I just finished reading her new book - It Ain't All About the Cooking. She has lead an intersting life and really has come a long way.

On a cooking note, I tried the pinneaple variation of the gooey cake and everyone loved it.

I just finished her book too and it was really good. I haven't tried any of the "gooey" recipes, but I saw on online the other day for Gooey Butter Chocolate cookies--cake like consistency with powdered sugar on them. They look fabulous-- I might have to try them!

I make those Gooey Chocolate Butter Cookies all the time -- everyone loves them and they are SO easy. Yum!
