View Full Version : What do I do with frozen fruit?

I bought a boatload of frozen fruit to make layered yogurt parfaits. Now I suddenly decided I don't like yogurt anymore. (I go through phases like that.)
What are my other options? I've made blueberry pancakes a few times, but I'd like lunch or dinner options, too.

I have a pie recipe that uses frozen strawberries. You could also make jams or syrups.

I have a recipe for a strawberry cake that uses frozen strawberries. You could probably also alter it to make it with blueberries. If you know anybody with a baby around Natalie's age, you could give them some blueberries to puree for babyfood (peaches, too...but not strawberries).
What fruits do you have?

I saw frozen fruit used in a bellini bar on "Everyday Italian" today. Puree frozen strawberries, raspberries, peaches, etc. with a bit of simple syrup, and add champagne/prosecco. Perhaps not as healthy as smoothies, but very nice for a summer late morning/afternoon.

Granitas! Defrost, mix with sugar/simple syrup, refreeze, scrape with a fork till into cups of granita :)
mmm...bellinis *yum* Of course, my love of bellinis doesn't help you, sorry GB. I'd say make some desserts with them. Depending on the fruits, you could also make a fruit sauce for some meats.

Everyone else has suggested some great ideas. I suggest the same:
smoothies
pie filling
ice cream topping
cereal or oatmeal
fruit salad (mixed with lowfat whipped cream)
use peaches to make a sort of spicy chutney to serve w/ chicken or pork

John uses them in oatmeal, smoothies, as tasty ice cubes in drinks like margaritas, sometimes on ice cream, warmed as a topping for waffles or pancakes.

cobbler - one of the recipes that are continually mentioned at weight watchers meetings.
spread a layer of fruit in a cake pan (i think it's like 2 bags - what is that, 20 ounces?)
sprinkle with 1 cake mix, any flavor... sprinkle evenly.
sprinkle a can of diet soda over all of that, trying to get everything wet (resist temptation to touch any of it with a spoon, it'll look wonky).
bake, i can't remember how long. i think it's the same length of time that is printed on the cake box.
top with lf or ff cool whip.
i have used:
frozen raspberries and lemon cake (or white cake), with diet sprite. mmmm.
frozen mixed berries or cherries with chocolate cake and diet coke or diet cherry coke.

Fruit flambees....if you have frozen strawberries, for example, thaw them out; saute them in a little bit of butter, sprinkle with a bit of brown sugar, lemon and/or orange zest, cook until a little bubbly (just a few minutes), and pour booze of your choice over all and ignite (kirsch works well; or peachtree if using peaches, etc.). Serve over ice cream.
You can make an easy trifle with angel food cake as well (either store bought or from a mix is fine). Thaw out the fruits first & drain well; layer cut up cubes of the cake with a layer of sweetened whipped cream and a layer of fruit, alternating layers. I've mixed cream cheese, vanilla extract & sugar with the whipped cream as well, to give a 'cheesecake' flavor to it. Very yummy. :)

me too....also can make an easy syrup for waffles and pancakes.
