View Full Version : Recipe for leftover steak

I made a London broil last night using a marinade from the latest issue of Gourmet. IT was excellent. I purposefully bought a big piece and there is a lot leftover. What would be a good recipe for the leftovers for tonight's dinnetr? I am thinking some sort of salad or even sandwiches, but would love to hear more creative ideas. I have a pretty varied pantry but nothing too exotic and I can't shop for any extra ingredients.

Fajitas? Saute some strips of onion and green pepper and stuff them with strips of the meat into tortillas.

I love to do fajitas with leftover steak.

My favorite thing for leftover London Broil is just to slice it and throw it on top of a big salad with tomatoes, red onion, and blue cheese with a balsamic vinegar/olive oil dressing. Not too creative, but soooo yummy!

Or pitas with a yogurt/cucumber/garlic sauce. We usually do this with lamb, but I think it would be good with beef too.

I second the salad idea - in fact, steak salad is on our menu this week :D

Love these ideas! No tortillas or pitas though. (I wonder if the Middle Eastern restaurant around the corner would sell me some pitas?) But the steak salad sounds really good. No bleu cheese, but I have goat cheese. So maybe a big salad with tomatoes, red onion, steak and crumbled goat cheese? I have leftover gazpacho from last night as a first course.

Cut it up into small chunks and sautee it in salsa. Put it between two tortillas, sprinkle in some cheddar, mozzarella or other type cheese, and make a beef quesadilla! Yummy!!!

You could also chop it up small and put it in a spaghetti sauce.

Speedy Stroganoff

INGREDIENTS:

2 to 3 cups diced leftover roast beef or london broil
1 can (10 3/4 oz) cream of mushroom soup
1 envelope beefy onion soup (dry mix)
1 can or jar (4 oz) sliced mushrooms
1/2 to 3/4 cup cream or half and half
1 or 2 tablespoons sour cream, if desired
salt and pepper to taste
PREPARATION:


Combine all ingredients except the cream in the slow cooker/Crock Pot. Cover and cook on low for 4 to 6 hours. Add cream and sour cream, if using, 10 minutes before done; salt and pepper to taste. Thin with water if desired.
Serves 4.

French Dip

1 1/2 lbs. sirloin steak sliced across the diagonal very thin

salt and pepper to taste

2 T. olive oil

1/4 C. minced shallot

2 garlic cloves minced

1 t. fresh thyme

1/2 C. dry white wine

1 1/2 C. beef stock

4 french rolls

Season the beef with salt and pepper. In a large skillet, heat oil over moderately high heat. Cook the beef in batches and cook about 2 minutes, or until browned on both sides. Transfer meat to a platter and keep warm.

Add butter to skillet and melt. Add garlic, shallots and thyme and cook, stirring for 2 minutes. Add the wine and reduce by half. Add the stock and simmer for 5 minutes. Butter and toast the rolls. Drizzle some of the au jus over the meat.

Divide the meat among the 4 buns. Transfer some of au jus to dipping bowls and serve with the sandwiches.

Serves 4.

Note: You can add fresh sliced mushrooms to this sandwich, if you choose. Saute them right after the beef.

So, in the end, I made sandwiches. ;) I sliced the leftover London broil into thin slices, sliced tomatoes, cleaned some red leaf lettuce and sauteed red onions in olive oil. I happened to have a delicious loaf of crusty sourdough in the freezer which we used for bread. Then, I took a citrus soy dipping sauce that had been part of the original dish and mixed it with mayo. Those were some yummy steak sandwiches! With gazpacho as a first course, it was a great summer meal. Thanks for all the ideas.
