I buy the big tetra packs of beef and chicken broth. How long can they usually last in the fridge after they've been opened?

Couple of days ... I wouldn't leave it longer than that.

I think it says on the package "after opening, keep refrigerated and use within 14 days."
Yup, I just checked (and threw out one that's been open way longer than 14 days :o ).

I feel comfortable using it within a week of opening. I need to get in the habit of freezing it because I hate having to throw it out. The best idea I've heard for freezing leftover broth is to pour it into ice cube trays, then put the frozen cubes into a storage bag or container. It's great because then you can use just a cube or as much as you need from the freezer. Now I've just got to remember to do it! ;) :)

We freeze ours in ice cube trays as well. I also freeze leftover red wine (when there's any leftover!)

Broth base (the kind that's almost like a paste) keeps for much longer in the fridge....and you just add water. Plus I find it to be more economical. :)
It tends to be salty, much like boullion, so I usually dilute it with more water than is called for.

I was going to suggest freezing it in ice cube trays but someone beat me to it! I do that with lemon juice too. It's so convenient just to toss a cube in with something when you need it!

I am extremely lax about expiration dates. If the broth smells ok I use it. I've had them open in the fridge for over a month and still used them with no ill effects.
I am not saying this is what you should do. We all have different comfort levels, and it also depends on what your body is used to handling. (I drink a lot of raw milk, extremely rare meat, etc.)
