Lots of different chile powders: Ancho, Red Jalepeño, Chipotle, Cayenne & Habenero (we also have these dried and whole)
Coriander
Several Curries

I probably have 50 bottles of spices - no joke. I luff them. Prefer fresh herbs in the summer, when they are cheap at the farmer's market.

My spice use varies with the season and my mood. Things that I almost always have in my pantry are:

kosher salt (I dont' use any other kind)
black pepper
chili powder
paprika
cinnamon
curry powder
garlic (whole, not salt or powder)
cumin
rosemary
basil (fresh)
thyme
seasoned salt
red pepper flakes
ginger
bay leaves

I order all my spices from Penzey's and I freshen them all up every 6 months or so. I love Penzey's and I love fresh spices! :)
