View Full Version : Help with cake and frosting

I told my mom I would bring the dessert for a celebration this weekend. It's a late birthday/early Mother's Day/late Easter celebration. I was thinking making a cute cake that's sort of Springy. The problem? All I've ever done is a regular cake with canned frosting. Any suggestions on what I could do that would be easy but still look really neat? OH yeah-and something that would taste good too?

Don't know if this is a help, but for Easter I made a yummy carrot cake with a cream cheese frosting. It was a big hit!

Aunt Pat's Strawberry Cake

1 pkg white cake mix
1 c oil
1 c fresh or frozen strawberries
1 c coconut (optional)
1 c pecans chopped (optional)
1 box strawberry Jello (small box)
4 eggs
1/2 c milk

Place all ingredients in a large bowl and beat at medium speed until mixed well. Bake at 350 degrees until done. (30 minutes for three 8 inch pans).

Icing:

1 box powdered sugar
1 stick margarine
1/2 c strawberries drained
1/2 c coconut (optional)
1/2 c pecans chopped (optional)

Cream margarine and sugar. Add strawberries and mix. Add coconut and pecans. Mix well. Spread on cooled cake. Decorate with whole or sliced strawberries, if desired. If electric mixer is used, be sure not to beat the mixtures too long.

I know this is late, but I wanted to throw it out there for other cake makers. This is my spring dessert cake; it always goes over well.


Prepare one box of white cake mix as directed on box.
Once cake is baked completely, remove from oven.
Bring one cup of water to a boil.
Dissolve one package of Jello into boiling water (I prefer sugar free cherry).
Poke holes with a fork or end of a wooden spoon into baked cake.
Pour Jello/Water mixture over cake.
Top cake with 1-2 cans of fruit pie filling (I prefer sugar free cherry pie filling).
Finally, top fruit mixture with non-dairy whipped topping (I prefer fat free Cool Whip).


I also think this would be yummy with strawberry jello, fresh strawberries, and the strawberry flavored whipped topping.

for easter, i made the "angel lush" cake that is on the cover of the most recent issue of kraft food and family magazine.

i played around with the recipe a bit, and added a coconut filling layer in addition to the pineapple filling. i called it "pina colada angel food cake". my whole family went ga-ga over it.
