OK. I probably should have had this figured out before I began making this, but maybe someone can help.

This is my first time actually baking a cheesecake (I've made no bake varieties before). I have the cheesecake oven in my springform pan baking right now. My question is about the spring form pan, as this is my first time using one of these as well. When do you take off the side of the pan? When it is cooling or just before you go to serve? My guess is the second, but just want to make sure.

Thanks in advance. Sorry if this seems like a dumb question, I just don't know. The cheescake looks really good...maple pumpkin! Yummmm! Having company for dinner, so I hope it turns out well.

I wait until I am going to serve it. When it's cooling you risk the chance of it moving somehow.

ETA It sounds yummy, and it's not a dumb question! You'll have to let us know how it turns out.
