DH's family does a potluck type thing for Easter and he signed me up to make a turkey breast. I am so not a cook - how does one cook a turkey breast??? Any recipes or tips that you can offer will be greatly appreciated!

You roast it. I made it this way once for t-giving:
Herb Roasted Turkey Breast (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_29088,00.html)
You will find that and other recipes if you look in the T-giving thread.

I was also going to suggest an herb roasted turkey breast, except this one is from Taste of home :)

The foodnetwork website won't load for me for some reason, so IDK if it's a similar recipe or not :)

I get a Reynolds oven bag and cook it according to the directions on the bag, just like I would with a full turkey. Pat the turkey breast down with some butter or oil, rub on some seasonings of choice, put a few tablespoons of flour in the oven bag...and voila. Using the bag is the only way I can ever get a turkey breast to brown and look pretty in addition to tasting good.

Hmmm - so do I have to buy a roasting pan for this (even if I were to use the oven bag thing)?

Thanks for the tips/sites!

You have to get a pan large enough for the breast to fit into. You don't necessarily need a roasting pan. You could probably use one of those foil ones they have at the grocery, just put it on top of a cookie sheet to keep it stable when you take it out.

I used a pyrex.

If it is a boneless turkey breast, you can pound it fairly thin, and spread some mushrooms sauteed in garlic and butter & olive oil over it, then roll it up like a jelly roll. Once in a jelly roll, tie it with twine. Roast it, and when you slice it, it should look like a pinwheel.

Sorry I don't have the full recipe--I'm out of town on vacation. If you're interested, I can post the exact info when I get home from vacation on Wednesday 4/12.
