I'm making this recipe that I found in the crockpot thread for Thai chicken. It has peanut butter, soy sauce, ginger and lime juice in it. I added some toasted sesame oil. Any ideas for a good side dish? What about a noodle salad? Anyone have any complementary recipes or ideas? Thanks.

How about some rice, that's what they usually serve it with at the restaurants...Basic fried rice

A Thai cucumber salad? You can find recipes online but I usually slice cucumbers, red onion, red peppers and then dress with olive oil, rice vinegar, squirt of lime juice. You can also add a bit of sugar if you prefer it sweet, and fresh cilantro if you have it/like it. Simple but yummy.

You could also serve Jasmin rice with it. I buy the "boil in a bag" type at Kroger because I ruined my favourite pot making it because it is quite sticky, even after rinsing.

I usually serve it with rice and a vegetable like sugar snap peas. I think lots of things would work, but I do like the rice to sort of soak up the extra sauce.

Duh! Definitely rice. Sorry, I had a lapse in thinking there for a minute. Thank you for reminding me that rice would be perfect. Also, that Thai cucumber salad sounds so refreshing and yummy. Off to look that one up.

Thanks ladies!:)

I serve a similar dish over pasta because I love the peanuty sauce on the noodels--but rice is great, tooo, and I like the idea of a green veggie like cukes or snap peas.

You could do jasmine rice and another side of green beans. I steam them until crisp tender (frozen works great), then drizzle with soy sauce and sesame oil. So yum!
