I made coconut banana pudding last night from scratch for the first time. For some reason it didn't thicken up as much as I would like. Is there anything I can do at this point to thicken it up? It tastes SO good, but it's too runny.

I wish I could come up with a good suggestion. Everything I would use to thicken something, like cornstarch, would probably ruin the flavor of your dish because it's already done cooking.
The only thing I can think is that maybe it's supposed to be somewhat runny because some puddings are. My mom makes a rice pudding that is pretty runny, for instance. I know I tend to associate the term pudding with the stuff you make with gelatin and that sets up pretty firm, but a lot of people would consider that almost more of a custard.
