Curious what you guys are making for Passover this year. Any and all recipes are welcome. We usually try to keep passover for a few days (I'm not Jewish so I just keep it up as long as hubby lasts). I may also host our seder this year. Not sure yet, MIL is planning on it, but my husband seems like he wants me to do it (I'd like to also).
Last year my best passover meal was pizzas on matzoh. It was really good (rivaling regular pizza). I just made like you would a regular pizza and just cooked it until the cheese melted. Yum!
What are you all eating?

You have to make some matzah ball soup, yum!

Yum! Matzoh ball soup, matzoh and chopped liver are my absolute favorites for Passover! Of course, I need to refrain from the chopped liver this year...bummer!
What about a brisket?

Hey, Jen, here's what I'm making this year:
This is one of our favorite Passover recipes that we actually eat year-round:
Vegetable Kugel
1 cup grated raw apple
1 cup grated raw sweet potato
1 cup grated raw carrot
1 cup matzo meal
1/2 cup butter, melted
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 cup sugar (optional)
Heat oven to 325. Grease a 10-inch casserole dish. Mix all ingredients together. Pour into baking dish. Cover with aluminum foil and bake for 45 minutes. Raise oven temp to 350, remove foil, and bake an additional 15 minutes.
*Double all ingredients, except sugar, and bake as directed in a 9x13x2-inch pan.
This is a Passover cookie recipe I found today. I'm going to make them tonight for our first seder.
Passover Bird’s Nest Cookies
1 cup butter or margarine
1 cup sugar
3 large eggs
2 cups cake meal, MINUS 2 tbsp
2 tbsp potato starch
1/4 tsp salt
1 medium lemon, juice and peel
cinnamon-sugar mixture
raspberry, or other flavor, jam
Heat oven to 350. Grease cookie sheets.
Beat butter and sugar in bowl of electric mixer for about 10 minutes until creamy. Add eggs and beat 5 minutes more.
Sift together cake meal, potato starch, and salt. Add to batter. Mix in lemon juice and peel.
Roll dough into 36 balls; coat with cinnamon-sugar mixture. Place on cookie sheet. Press finger to indent centers and fill with jam. Bake for 8-10 minutes. Let cool slightly and transfer to wire racks to cool completely. Makes 24 servings.
And this is a brownie recipe I found to try for our second seder:
Cheesecake Brownies
Brownie Batter:
1/2 cup matzo cake meal
1/4 tsp salt
1/2 cup butter or margarine
1/2 cup unsweetened cocoa powder
1 cup sugar
2 eggs
3/4 tsp vanilla
Cheesecake filling:
1 (8 oz) pkg cream cheese, softened
1/3 cup sugar
1 egg
1/2 tsp vanilla
Prepare brownie batter: In a small bowl, mix together matzo cake meal and salt.
In a medium microwave bowl or saucepan, melt butter or margarine. Remove from heat. Stir in cocoa powder. Add sugar, eggs, and vanilla, and mix well. Blend in matzo cake meal mixture until well combined. Set aside.
Prepare cheesecake filling: In a medium bowl, beat cream cheese until light. Gradually beat in sugar. Add egg and vanilla and beat until smooth.
Heat oven to 350 f. Grease a 9" square pan. Spread half the brownie batter in the prepared pan. Spread cheesecake filling over top. Spoon remaining brownie batter evenly over filling. To create a marbled effect, pull a knife through both the batters in a straight line, repeating in across the pan about one-half inch apart. Bake 30 minutes. Cool completely before cutting into squares or bars.

If I am home, we make chicken, nice and easy.
I messed around with matzoh pizza. I just put sauce and cheese on a matzoh and its yummy.
We (as just my husband is Jewish) try and keep it. We usually do a good job of it, but his B-DAY almost always falls on the holiday. It does this year, and ironically mine falls on Yom Kippur(well sundown it begins and thats my day).
