DH and I LOVE to watch her 30 Minute Meals show on Food Network and are thinking of getting her book collection.

Does anyone have one or all of them?

Are the recipes as easy as they look? Are the ingredients things 'normal' people have around the house most times?

Just want to get some honest advice before spending $$ and being disappointed.

EDIT: I would love to hear everyone's favorites of hers.

I dont have any of her books but i have tried some of her reciepes from off foodnetwork.com and i must say the ones i have tried are pretty tasty. For the most part i have the stuff, except the fresh herbs part but i normally dont have a probelm substituting them out for dried herbs, if i am being lazy and dont want to go to the store. I would recommend trying some of her recipes off the internet before investing in the books.

I love Rachel Ray's recipes! I don't have any of her books, but I go to www.foodtv.com for her recipes.

I think my favorite are the BBQ Meatloaf Muffins. I make the whole recipe and then make my DH meatloaf sandwiches for lunch with the leftovers.

I have her Cooking Round the Clock cookbook, and I just love it. Pretty much all of the recipes I use are RR. We've yet to try a recipe of hers that we haven't liked. They really are easy and fast, and fairly easy to modify if you want/need. The hardest thing is the chopping, but once you've got that down, it's a piece of cake.

Ingredient wise, she does use a lot of spices, which I know I didn't have around to start. But she does use the same ones in multiple recipes, so you will use it. For most of her recipes you'll typically always need olive oil, garlic, salt, and pepper, so I always have a good supply of that around.

I would print a couple of her recipes off the Food Network website and give them a try to start so you can get a feel for it. I'd recommend the Corn and Crab Chowder or Spicy Meat and Cheese Strombolis. Very easy and yummy!

I do love watching her shows. My favorite is $40 a day; how great would it be to travel to fun places and get paid for it!

I have her 30 Minute Meals cookbook and I have to say, I don't love it. I really thought I would. But the layout is funky to me. The recipes are not arranged in categories, but rather by meal. Some people might like that but it's just not my personal taste in cookbook layout.

The only RR book I have is one for get-togethers in 30 minutes or something. I 'm not sure if it's the recipes I don't like or her writing style. I've come across at least 5 good recipes in the book though. I'd really like to ger her $40 a day book and I only want that because it's got restaurant recommendations.

I have ther $30 a Day cookbook. I love it. Since its based on the show it doesn't have as many recipes.

We have her 30 minute meals 2 book and it's our favorite cookbook. The meals take between 45 minutes to an hour and fifteen minutes from prep to table. There are some more exotic ingredients, but not that many.

But you can get the best recipes free off of foodnetwork.com, so do that for awhile first and decide if you like her style :).

Almost every recipe I cook now is a RR! :D I don't have any of her books - I just watch her show and then get the recipe from foodnetwork.com. As a novice cook, she has taught me a lot and made me feel pro even when I couldn't boil water.

My favorites so far:

I have 4 of her books. They are arranged a little differently - by meals, instead of by food. But I only find it to be a problem in her original 30 Minute Meals and Cooking Round the Clock and that's because those don't have an index. 30 Minute Meals 2 and 30 Minute Get Togethers do have an index, so they're a little easier to use.

I love 30 Minute Meals 2. I gave it as a Christmas present last year. I also have printed off some recipes from the internet (and then I can't find them because I can't remember if the recipe is in one of the books or on a print out! ;) ).

I'm also a big Rachel Ray fan! I have 30 Minute Meals 2 and the $40 a day books. I like the 30 Minute Meals better since it has more recipes. We've made a TON of her stuff and it is all good!

My all time favorite Rachel Ray recipe is "Chicken Satay Stir Fry (http://www.foodnetwork.com/food/cooking/recipe/0,,FOOD_9936_25800,00.html)"

The orange-scented rice isn't necessary...regular rice is fine. Next time, I think I'll try rice noodles (like Pad Thai noodles).

Edited to add: I made another RR recipe tonight, the "Perfect Paella." It was pretty ordinary. I'll eat the leftovers, but won't make it again.

I like her recipes, especially the burgers. My favorite is the Turkey Tikka Burger recipe. In fact, I just made this for dinner tonight! She makes them with an Indian spiced corn on the cob, but I prefer using frozen peas with the same spices.

Burgers:
olive oil or other cooking spray
1 1/4 lb (one regular grocery store package) ground turkey breast
2 scallions, chopped
1/4 small bell pepper, chopped (3 tablespoons)
2 cloves garlic, chopped
1 inches fresh ginger root, peeled and grated
2 tablespoons chopped fresh cilantro
1 rounded tablespoon curry paste
1 tablespoon grill seasoning
1/2 cup plain yogurt (I use Greek yogurt for this - it's really thick and I think it helps keep the burgers together better)

Peas:
1 package frozen peas
1 tablespoon butter
1 tsp chili powder
1 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp ground cardamom
salt to taste

For the burgers: spray a nonstick skillet with cooking spray, and heat over medium-high. Combine all remaining ingredients in a bowl and mash together with your hands until mixed. Divide into three equal portions and form into patties. Cook in hot skillet, at least 5 minutes per side or until completely cooked through.

For the peas: Cook peas according to package directions. Add butter and spices to hot peas and stir until the peas are coated.

Serves 3 (I save the leftovers for lunch).

I love Indian food, but to me the burgers don't really taste curry-ish in case that is a turn-off for anyone (the peas do have a very strong "Indian food" taste). The burgers just turn out really flavorful - you can also use Thai curry paste instead of Indian. Also I can't be bothered to measure out 3 Tbsp of bell peppers so I just use a whole small one and they turn out fine.

And if you are doing WW, the burgers are 6 pts and the peas are 2 pts per serving.

I have one of her cookbooks but I have yet to make anything from it... but oh I absolutely love watching 30 Min Meals! And MIL adores her... has just about every cookbook she's written and makes her recipes frequently.

I love Rachel Ray, it doesn't hurt that she is a local celebrity my way!! She lives about 45 minutes away in Lake Luzurne and I used to watch her on Channel 6 before she hit it big :) We have made her Pasta fagioli (major sp!) and her home fries. Both are delicious and are crowd pleasers. I don't have the recipies as DH is the chef in our house, but I am sure you can get both online.

I love Rachel Ray too!! I have 2 of her cookbooks and one of my favorite recipes is her "4 minute spicy garlic shrimp". It's so easy to make and l usually add some red and green peppers. I usually serve it with rice or couscous. Here is the recipe:


2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful


-Heat a large skillet over medium high heat.
-Add extra-virgin olive oil (2 turns of the pan), garlic, red pepper flakes and shrimp.
-Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink.
-Toss with lemon zest, juice and chopped parsley.
-Remove shrimp to a serving platter leaving the garlic cloves in the pan.

I LOVE RR! It sounds cheesey, but she and 30 MM really have completely changed the way I cook. I have a folder full of recipes printed off the Food Network website, and I also have her 'Cooking Round the Clock' cookbook. I'm not a big fan of how it's organized, but the recipes are great. Here's a list of everything we've tried. I don't think there's one recipe I've made that we haven't liked.

I was just watching her today and she made on her show corn dogs. She baked them instead of frying them and they looked so good. I have actually never had any kind of corn dog-fried and/or baked, but I am definitely going to make them this summer!

I made her Waterzooi de Poulet this evening for the 2nd time - came out better this time than before. If you follow her recipe, the vegetable are still a little crunchy (and my DH likes them soft), so I suggest letting them cook longer.

For anyone interested, it is a "stew" made of leeks, carrots, potatoes (and cooked in butter), and then add chicken stock. Bring to a boil, and then add chicken. Mix together some heavy cream with one egg yolk, and add to the mixture (add some of the hot broth to the cream first, and then mix together). Let stand for about 5 minutes, and then serve with crusty bread for dipping.

A huge hit - it was very good!

I saw the cornbread episode, too. They looked so yummy! If my shopping list wasn't already done, I definitely would've gotten the ingredients...next week!

I love her cheeseburger salad, BBQ meatloaf muffins (a little spicy with the salsa, though). I make more of her stuff, but I can't think of what right now.

i've made her salmon cakes and mexican lasagna and i tried her stuffed chicken breasts but cant remember what the actual name of the recipe was.

i like watching her show and if something appeals to me i write down the ingredients and then make the recipe.

Is it true she has cancer? my cooky babysitter said she heard she has cancer and supports medicinal marijuana use for cancer.

mgrace, I ADORE her fake-baked ziti! It's one of my fave recipes from her.

I actually met Rachael Ray! She was filming one of her shows (I think it was $40 a day) at a Pan-Asian restaurant in downtown Seattle a week and a half ago. She was very nice. :)

I adore Rachael Ray! She's really the cook on Food Network that inspired me to make more interesting meals. I don't make her food as much now, but I still have her cookbooks and there's a couple recipes of her that I've made many times. My very favorite is these porkchops. The "stuffing" is sooo good.

Sunday Supper Stuffed Pork Chops, Cream Cheese Potatoes, Sugar Snap Peas

2 1/2 pounds potatoes, peeled and cut into chunks
Salt
1/2 cup milk
4 ounces cream cheese
1 small onion finely chopped
2 tablespoons chopped fresh chives, optional
1 tablespoon olive oil or vegetable oil, plus some for drizzling
2 slices bacon, chopped
1 small McIntosh apple, chopped
2 ribs celery from the heart, finely chopped
1 small onion, chopped
2 tablespoons freshly chopped sage leaves, or 1 teaspoon ground dried sage
2 tablespoons freshly chopped thyme leaves, or 1 teaspoon dried leaves
Freshly ground black pepper
2 store bought corn muffins
8 thin boneless center cut pork loin chops
2 pounds sugar snap peas
1 cup chicken broth or water
1 tablespoon butter

Cover potatoes with water and season with salt. Cover pan to bring potatoes to a quick boil. Boil potatoes until tender, about 12 minutes. Drain potatoes and return them to the hot pot to dry. Set aside. Heat milk, cream cheese and onion over medium low heat until cream cheese melts into milk and mixture bubbles. Pour hot milk and cream cheese into the potatoes and mash to desired consistency. Add a little extra milk for softer potatoes. Season with salt, to your taste, and transfer to a serving dish. Garnish with chopped chives.
Preheat a medium skillet over medium high heat. Add oil and bacon to the skillet and cook 2 minutes. Add apple, celery and onion and season the mixture with herbs, salt and pepper. Reduce heat to medium. Cook vegetables 5 minutes, stirring frequently. Crumble the corn muffins into the pan and combine stuffing.

Preheat a large skillet or grill pan over medium high heat. Drizzle chops with oil and season with salt and pepper. Cook chops 3 to 4 minutes on each side. Do not over cook. The chops should be firm but still giving off juices.

In a medium saucepan, place snap peas and broth and 1 tablespoon butter over medium high heat. When the liquid boils, cover the pan and reduce heat to low. Simmer snap peas 3 to 5 minutes, until tender but still green. Remove pan from heat and season snap peas with salt, to taste.

To assemble stuffed chops, set a thin chop on dinner plate or serving plate. Mound the pork chop with stuffing, allowing some to spill onto the plate, then top with a second chop. Repeat with 3 remaining servings. Pass potatoes and snap peas to complete the meal.


I frequently make it with just regular pork chops and sometimes I don't stuff them. I just eat them with the stuffing. Either way, it's good.

I love Rachael Ray's recipes... my all-time favorite of hers is her Vodka Pasta. FANTASTIC!! I also love her pork chops, pecan-crusted chicken tenders and BBQ salad dressing, and several others I'm sure I've forgotten.

However, last night I made her Satay Sauce (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_25800,00.html) that goes with her Satay Stir Fry, just so I'd have a sauce to use with some chicken tenders. It was horrible. :( It was so thick and peanut-butter tasting...it wasn't even pourable. I may try it again, but probably cut the peanut butter in half and increase the soy and orange juice.

I made those pork chops and my stuffing was so dry!!! I dont know if its because I used ready crisp bacon so I didnt have the fat from that...because all the recipe calls for is the 1tbsp of oil for the stuffing....so anyways I havent tried it again because DH hated it the first time. But Im hoping it was because I didnt have the fat from the bacon to make it more moist. Who knows!

Lizard, what kind of PB are you using in the satay sauce? I make satays all the time and just use all natural PB (peanuts, crushed) instead of the Jiffy-type PBs.

I made the corn dogs last night, and my goodness, they are messy lol. They were really tasty though. Next time I'll put them on skewers to help with the dipping.

Aren't Rachael's corn dogs messy? They were yummy though! DH was asking why I wasn't using sticks for them. First of all, her recipe didn't say to and second of all, we didn't have any. It would've made it easier. I wonder, because she just throws things together and never really measures, if more milk would've made it easier to smother.

Vodka Pasta is my favorite dish of hers... it tastes really really good in my opinion. Has anyone else here tried it and liked it? Maybe we could get a consensus for you. :) I would make it once a week if my husband didn't mind, honestly. We don't drink vodka, but we had a bottle of it left over from our wedding 2 years ago, so we've been using that. Once that's gone I'll have to buy a bottle just for this dish, I guess.

Huh. That's so weird! I guess it can be a little dry, because it's not really a "stuffing", it's more like a cornbread and apple side. DH and I always add more bacon than called for, though, so maybe that helped.

I also want to second the pecan-crusted chicken and BBQ salad dressing. I've only made it once, because it required deep frying, but it was absolutely delicious.

I make this satay stir-fry a lot, and I've never had trouble with the sauce (have used natural pb, reduced fat, and regular, depending on what's in the house). I'm sorry you had such a bad experience--it's one of my favorites!

Peasant pasta
Chicken with dumplings


The basalmic chicken cutlets over spinach salad is really good too.

I have a question for those who have made the Buffalo Chicken Sandwiches - did your sauce "stick" to the chicken well? Maybe I used too much butter or hot sauce, but mine seemed awfully runny. It didn't stick to the chicken like I had hoped it would, so the chicken wasn't very spicy. Any ideas what I did wrong?

No it doesnt stick when I make it either...I dont think its supposed to...I know when I first made it I was thinking it would be like a buffalo sandwich you get in a restaurant...which all I can conclude is that its not breaded so it wont be the same??? :confused:

Usually when I make it I let it marinate in the hot sauce for at least most of the day if not overnight. This makes it more spicy tasting!!

I made the Garlic and Lemon Chicken with Smashed Potatoes last night, mmmm-mmmmm! Sooooo easy and very tasty. It reminded me of a Sunday after-church type dinner. Delicious.

I just made her oven baked corn dog recipe. The batter I made seemed really thin and didn't stick to the hot dogs well. They're baking right now, so I don't know how the final product will turn out.

Did anyone else have this problem? How did you remedy this? Thanks.

ETA: I just took my "corn dogs" out of the oven. All of the corn bread mix ran off and made a pool of mix. The dogs are somewhat covered but I have all of this corn bread stuff everywhere. What did I do wrong?

Well, the hotdogs had a really thin layer of the corn bread mix on them but a lot of the mix ran off the dogs and pooled up around them. It was sort of like hot dogs surrounded by corn bread. We ate them anyway with the usual corn dog condiments. They were good but I'd like to have actual corn dogs, ya know?

Still seeking advice from ladies who have made these sucessfully.

Maybe reduce the milk a bit? Ours was thicker, but still did fall around the sides...it was still on the dog though. I liked it because it was like eating a corn muffin and a corn dog.

I made the Garlic and Lemon Chicken with Smashed Potatoes last night, mmmm-mmmmm! Sooooo easy and very tasty. It reminded me of a Sunday after-church type dinner. Delicious.

Here you go-
Garlic Roast Chicken with Rosemary and Lemon
2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
6 cloves garlic, crushed
3 tablespoons fresh rosemary leaves stripped from stems
3 tablespoons extra-virgin olive oil, eyeball it
1 lemon, zested and juiced
1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
1/2 cup dry white wine or chicken broth

Preheat oven to 450 degrees F.
Arrange chicken in a baking dish, 9 by 13-inch. Add garlic, rosemary, extra-virgin olive oil, lemon zest and grill seasoning or salt and pepper to the dish. Toss and coat the chicken with all ingredients, then place in oven. Roast 20 minutes. Add wine and lemon juice to the dish and combine with pan juices. Return to oven and turn oven off. Let stand 5 minutes longer then remove chicken from the oven. Place baking dish on trivet and serve, spooning pan juices over the chicken pieces.

That roast chicken recipe reminds me of one I make using feta cheese. Basically the same thing, just add feta cheese with the rosemary and lemon zest. It's yummy.

I made Rachael's Orange burboun chicken last night. DH and I both liked it, so it'll be going on the regular cook list.

I made the Fake Bake Ziti last night. It was very good. DH doesn't like large chunks of tomato, so I pulsed the tomato/basil/olive oil mixture in the blender for a few seconds before mixing it with the pasta.

Had the Buffalo Chicken Bites the other day and made a Chicken Tortilla Soup (that's not what it's really called, it's something like 'Why the chicken crossed the road soup' or something like that') last night. The Buffalo Chicken bites were pretty good, although they do fry up really quickly and I burned a few lol. The soup was great with some sour cream and crushed chips on top.

I watch Racheal practically every night. I am not a big "chopper", so when her recipes call for a ton of chopping, etc. I usually will still watch, but know I won't ever make it. Finally saw an episode with not too much chopping and it seemed SO easy. I made the Mexican Lasagna last night, it was SO good. Will def. make again! I used ground turkey instead of ground chicken and just grabbed flour tortillas instead of spinach, but otherwise, stuck to the recipe.. it tasted sort of just like chili in a pan.

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of
market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Preheat the oven to 425 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons
extra-virgin olive oil – twice around the pan. Add chicken and
season with chili powder, cumin, and red onion. Brown the meat, 5
minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and
taco sauce. Add black beans and corn. Heat the mixture through, 2 to
3 minutes then season with salt, to your taste.

Coat a shallow baking dish with remaining extra-virgin olive oil,
about 1 tablespoon oil. Cut the tortillas in half or quarters to
make them easy to layer with. Build lasagna in layers of meat and
beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese
again. Bake lasagna 12 to 15 minutes until cheese is brown and
bubbly.

I halved it when I made it, as I usually do most of her recipes the first time I try them in case they don't turn out well. Once we've decided we like something, I make the full batch and DH or myself will take the leftovers to work for lunch.

I made the Devlish Chili Cheese Dogs from Cooking around the Clock and DH LOVED them!! He ate 4 of them!!! :eek: ( I could see his arteries clogging as he chowed them all down! :)!!) Even though Im positive that they are alot better for you than using can chili or getting them at Sheetz (his fave place for them)!!

I used an 8x8, or if the chicken happens to be a little bigger, I'll use a 9x13. I usually roast for about 15 minutes or so.

Smoked Turkey Baked Chimichangas

1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped

Preheat your toaster oven to 400 degrees F or high.
Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.

I served the chicken with broccoli, cantaloupe, and mashed potatoes. I used a recipe from Good Deal with Dave Lieberman and it was so good. I mashed red potatoes and mixed them with basil, chives, butter, and cream. Delicious!

I serve RR's pesto smashed potatoes with it. I boil and drain the potatoes, then add chicken stock, a little butter, salt, pepper, and store bought pesto, then mash them. Very good. You can add pretty much anything you like to the potatoes if you don't like pesto though- cheese, sour cream, bacon bits, etc.

Oohh.. thank you for the tip! I actually have this chopper thing my MIL gave me for onions and the like (which I love!), but it doesn't do garlic.. so this may be just the ticket. If not, does anyone recommend anything for just garlic? Do they make anything like that?

I'm definitely joining this thread. I love 30 Minute AMeals and always try to get home in time to turn it on.

For Christmas I'm asking for a couple cookbooks. I always get her recipes off Food Network's site and love the ones we've tried so far.

ETA: Plus, I like to be able to cook a quick, but good and healthy meal. I rarely find the time since I work FT and have a 1 year old. Everyone's got 30 minutes!

1 lb ground beef
2 eggs
breadcrumbs
1 onion chopped fine
worcestershire sauce
salt/pepper

Mix all the ingredients together and then divide into 4 parts. Make into slightly oval shaped pattied. Heat olive oil in a skillet on med-high. Place patties into the oil and sear them on one side. Turn and sear on the other side and then lower the heat and cook thru.

They're yummy and DH loves them.

A word about the garlic press - ideally you shouldn't use a press. It smashes the garlic too much and makes it bitter when it's cooked.

I made these last night... well, I think I did anyways. :) I tried to look up this recipe on Food Network, and found Meatloaf Patties (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_17551,00.html). I didn't have all the ingredients for that, so I used your recipe and added some grill seasoning and allspice from the other recipe. I was out of onions too, so I used shallots instead. They were REALLY good!! I'm keeping this recipe for those times I have a pound of hamburger and don't know what to do with it. :D

It seems pounding the side of the knife might warp the edge? I finally have a good knife, so I want to make sure I take care of it. Good to hear it hasn't hurt yours, though - maybe it is okay then?

A friend of mine graduated from the CIA (Culinary Institute of America) and he used to always tell me to do that. Since then it has just become second nature. I use a good knife and have been doing it for over 3 years, and I have never noticed any problems.

My favorite salad is the pear and walnut salad in mixed greens. The dressing is apple cider vinager, honey, and EVOO. I sometimes add grapes and apples. I have gotten so many compliments everytime I have made it. I call it my little secret recipe :D

Here you go! The leftovers are just as good the second day :)

Spinach-Artichoke Casserole

1 pound crusty bread (a small round loaf)
2 boxes (10 oz. each) frozen chopped spinach
2 tablespoons EVOO
2 cloves garlic, cracked away from skin
1 can (15 oz) quartered artichoke hearts, drained
1 teaspoon coarse salt
2 large eggs, beaten
1/2 cup heavy cream
2 cups shredded Swiss cheese
1/2 cut grated machego or Parmigiano Reggiano cheese
Fresh ground black pepper, to taste

Preheat oven to 425. Trim two sides of the loaf and thickly slice the bread. Places slices and ends on baking sheet in the oven to toast.

Defrost spinach in the microwave, then squeeze dry in a clean kitchen towel.

Pour EVOO into a 13-inch oval casserole dish or a 9x13 rectangular dish, liberally coating the sides and bottom with oil. Rub toasted bread with cracked garlic and cut into large chunks. Arrange the toasted, garlic-rubbed pieces of bread in a single layer in dish. Do not pack tightly. Add the artichoke hearts to the dish, nesting them in and around the bread. Sprinkle the spinach around the casserole and season with salt. Beat eggs with cream and pour evenly over the dish. Top with cheeses and pepper and bake until golden on top, about 17 minutes.

Last night I made the super easy buffalo chicken salads. I have Cooking Round the Clock, which has good recipes but there is no index! I HATE that! It is divided up by the type of meal (breakfast, lunch, etc) - I like looking up recipes by the main ingredient so the lack of an index is really annoying to me. Overall I wouldn't recommend this one - the recipes are good but it is frustrating to use (for me - it might not bother someone else).

Cooking Round the Clock is the only RR cookbook I have, and while I love it I have the same frustrations that emmjay does about it not having an index. It can get irritating. The recipes in it are great though.

I can't wait to get her new book, Cooking 365: No Repeats (or something like that). I think it comes out next week?

Paella Burgers and Spanish Succotash

INGREDIENTS
1 1/2 pounds ground chicken breast
1/4 cup, a generous handful, flat leaf parsley, chopped
4 cloves garlic, finely chopped, divided
1/2 small yellow skinned onion, finely chopped
2 tsp. sweet paprika, a palmful
4 tsp. hot sauce, divided
2 lemons, zest and juice
2 Tbsp. grill seasoning, such as Montreal Steak Seasoning by McCormick, divided
EVOO—extra virgin olive oil—for drizzling, plus 1/4 cup (eyeball it)
1/2 pound chorizo, peeled from casing, cut on an angle 1/2 inch thick*
1 jar 14–16 ounces, Piquillo peppers or roasted red peppers, drained well
Salt to taste
4 jumbo shrimp or prawns, 8 count per pound, peeled and deveined and butterflied*
1 tsp. ground cumin, 1/3 palmful
1 can garbanzo beans, 15 ounces, drained
3–4 small ears fresh corn, kernels cut off or, 1 box 10 ounces frozen corn, defrosted
1 small red onion, peeled and finely chopped
2 Tbsp. chopped cilantro, a palmful
1/4 cup drained chopped salad olives or Spanish olives with pimientos
4 Portuguese rolls (slightly sweet rectangular crusty rolls), split—any crusty bread or roll of choice may also be subbed here
2 cups chopped romaine lettuce

Preheat a large grill pan, griddle or nonstick skillet over medium-high to high heat.

Place chicken in a bowl. Add chopped parsley, 3 cloves of the chopped garlic, onions, paprika, 2 teaspoons of hot sauce (eyeball it), the zest of 1 lemon and a palmful of grill seasoning to the bowl. Drizzle some EVOO over the chicken, then mix the meat to combine. Score the meat into 4 potions and form patties 1 inch thick. Wash up and add the patties to the hot pan or grill. Cook 5 minutes on each side.

Place the chorizo above or along side burgers. Cook the sausage just a minute or 2 on each side. It is already fully cooked; you're just crisping the edges and heating it through. Remove crisped chorizo slices and reserve.

Grind the peppers in a food processor to form a pepper paste. Season peppers with a little salt to taste, if necessary, and reserve.

Dress shrimp with lemon zest, the juice of 1/2 lemon, EVOO and grill seasoning. Grill the butterflied shrimp or prawns along side the burgers, 2 minutes on each side, press them down to keep them from curling up by using a plate or small skillet weighted down by something heavy from your pantry, like canned good. You can also press the shrimp in a sandwich maker or panini press if you have one.

In a medium bowl, combine remaining 2 teaspoons hot sauce, cumin, remaining 1 clove chopped garlic, the juice of 1 whole zested lemon, about 1/4 cup EVOO. To the dressing, add the garbanzo beans, corn, red onions, cilantro and olives. Toss the salad to coat and season with salt and pepper, to your taste. br>
Remove meat and shrimp to a plate and char rolls if you like them crunchy or, press them in a sandwich maker. If the rolls are fresh and super crusty already, just split them open. Add chopped lettuce to roll bottoms then top with chorizo, chicken patty and shrimp. Slather the bun top with ground peppers and set in place. Serve succotash along side.

* To butterfly the shrimp, cut into and across but not all the way through then spread the meat, like wings. For the shrimp, cut along the devein incision, then spread it open.

DH told me that the thing about Rachel Ray is that she's a "real" girl. (We discussed this a few weeks ago because we were talking about his "list"! :)) She's not super stick thin, she's not too formal, she's not snotty, she doesn't wear designer clothes or have a ton of makeup on. She's just someone real, kinda cute, who giggles, who talks about her family, and who eats real food (not a salad and a 1/4 of a piece of dry toast).

At least that the gist of what he's told me.

We had Pork Chops and Golden Applesauce last night and Gorgonzola and Sage Burgers last week, both very good. I loved the applesauce, but I wish it had been a little thicker. I thought it would thicken while it was setting, but didn't really get to the consistency I was hoping for.

That's what i like about her - she seems like the total girl next door who you could be friends with. And she's also a real woman - her weight fluctuates just like mine, i just happen to not be on TV every day!!! She annoys the crap out of my hubby though. He can't get past how much she talks with her hands.

I didn't know they were getting married so soon! She looks really pretty and happy!

You're so right about the shirts being unflattering on her despite the fact that she is not overweight at all. She might be trying to show off that she's healthy and in shape, but it just draws attention to the body and makes her look like she's trying too hard. Those are a hard look to pull off for anyone I think, LOL....she does looks great in that wedding pic tho! Good for her.

As previously reported in TelevisionWeek, author and cable network cooking personality Rachael Ray has made a deal with King World Productions for a syndicated talk strip.

The new series, which will be shot in New York, will be produced by King World Productions in association with Oprah Winfrey's Harpo Productions and Scripps Networks, and distributed by King World. Ms. Ray will continue to appear on Food Network, where she hosts a number of cooking and travel shows. The weekday one-hour talk strip will be available to stations for fall 2006.

The project is the first for Harpo since it launched "Dr. Phil" four years ago. It is also the first talk strip for Terry Wood, president of creative affairs and development for King World Productions and Paramount Domestic Television, since she was given an expanded role with the Viacom-owned distribution companies in January.

Just for a change of pace - I don't think Rachel is all that fabulous. Her food really isn't that good (have you ever watched her program?) I'm not saying I'm a great chef or anything, but there are a lot of very talented cooks out there and it's kind of a shame that all the focus is on her. She does seem like a nice person, but I think she is very overrated. Bobby Flay, for instance, is much better and he actually has a cooking education to back him up. Rachel puts too much garlic in everything and one time I even saw her cook a beautiful tuna steak - :eek:

My husband gets mad if she is on the television because she annoys the crap out of him with the EVOO/GB/NICE! peppiness. And he hates the way her clothes fit on her body. I think he might hate her more than he hates Paris Hilton. ;)

Her food really isn't that good (have you ever watched her program?) One would presume if someone was a fan and posting in this thread, that they'd watched her show. :) And I like a lot of her food. We've made a lot of her recipes off of foodtv.com and found them quite good. We've changed some things to suit our tastes, but even following the recipe as is, we mostly enjoy them.

No they're not haute cuisine, but that's the nice thing about the variety of shows on Food TV. Not everyone wants to or can take the time or money to cook gourmet food every night. Rachael has never claimed to be a chef - in fact, like Alton Brown, she goes out of her way to say she's *not* a chef with any kind of food education - she's an eater who loves to cook for herself. She's certainly never claimed to be otherwise.

I can certainly see how she might get on someone's nerves and I do find that I can only watch so much of her at one time (lately Food TV has been running 30-Minute Meals back to back and it gets to be a little too much peppiness for me! :)), but overall I don't think she's so horrible as to inspire hate or the general viciousness I've seen on various boards.

Anyway, all that just to say that I like a large number of her recipes.

I enjoy watching her shows b/c they aren't intimidating, they are quick meals, and it's always something that I can actually attempt to make that is actually edible :).

I saw the "Rachael Ray Sucks" LJ today for the first time, and those people watch her show every single day just to make fun of her! EVERY DAY. They comment on what she made, what she wore, what she said, etc. That's kind of pathetic - if they hate her so much, why not just turn her off?

And as for her food, all of her different burger recipes are great! :)

She does have pretty crappy knife skills though - I can't believe she doesn't draw blood every time she cuts an onion.

I have recently started watching her show and I think she is great! I normally don't watch these sort of shows because I get bored easily, but she keeps me entertained and she has the cutest personality!

Although her recipes may not be for meals you would eat in a fancy restaurant, they seem to be easy, tasty and convenient...which is just what I am looking for!

Not only that, but from the easy dishes she makes on her show, I've also mustered up the courage to make more difficult, sophisticated dishes from other shows on the Food Network. So for everyone that complains about her because she's not a chef and doesn't deserve her own show, all I have to say is - so sorry if we all can't be sophisticated gourmet chefs.

Now if you're complaining about how annoying she is that's one thing, I'm with you on that one, but complaining about her lack of being a chef and her ultra simple meals - that's just ridiculous. Some of us would be cooking out of a box if it weren't for her.

Us too! I feel like I'm able to make really nice, healthy dinners now that I've been watching 30 Minute Meals. It's totally changed the way I cook.

I made the grilled sirloin burgers w/swiss, mushrooms, and balsamic mayo and thick cut onion rings for dinner last night (from 30 Minute Meals 2). It was wonderful. The baby portabella mushrooms really went well with the burgers. I did find that I had to double dip the onion rings to get a decent amount of batter to stick on, but once that was discovered they were great.

I like that RR makes cooking accessible for everyone--not all of us are great cooks or really even very comfortable in the kitchen. My husband and I really like to cook--and I think we are pretty good at it. But we have neither the time nor inclination to make gourmet meals every night--some of her recipes are great timesavers and still taste wondeful!

Last night I made her Korean BBQ Flank Steak (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_30793,00.html) and OMG!!!!!!!!!!!!!!!!!!! It was one of the best meals I've ever made! That marinade on the beef is just awesome.

Tonight I made her Bread "gnocchi" (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_31521,00.html) but it wasn't all that great. It sounded good, but I put too much sauce on it and the bread was too soggy. I think I'm going to try the recipe again sometime but use less sauce. It seems like it should be pretty good if the bread's not too soggy.

Hey Meredith - I actually saw the episode with my brother.

Well, I can't remember what she did with the sauce, she probably just used a lot of her ubiquitious garlic and "roasted canned tomatoes". She was creative with her meatballs however - she added bread crumbs and an egg to some ground meat. I mean, what an ingenious recipe! How did she come up with such gold?!:p

My brother said that Bobby Flay must be getting mad :mad: , coming up with such great recipes like grilled swordfish with mango chutney, while Rachel is pouring canned tomatoes over dried pasta for her dishes. She probably isn't spending as much time on her Food Network homework!!! :eek:

Rachel has very American traits when it comes to cooking and the art of dining...which is part of her 'simple' appeal. I saw in another post that you like Bobby Flay (me too!), but not everyone aspires to culinary genius. I mean, somebody has to be buying the canned chunk dark tuna in the grocery stores, right? :p

All in all though, I do like the food she makes. :D

I just feel that Rachel Ray's show is an example of the dumbing down of America. Sorry, don't crucify me, it's just my opinion. If you want really simple good recipes, go to Julia Child - she does it a million times better but in a classic, correct way. Seriously. It's not that hard and all of you people out there saying that "not everyone can be a gourmet chef" - you're not giving yourself enough credit - cooking isn't that difficult. Cooking simple dishes that taste great can come from sources other than Rachel Ray - how do you think people learned how to cook before her???:confused:

I have 30 Minute Meals 2 and really love it. I've made at least half of the recipes and they've all been delicious and pretty easy. I'd love to hear what everyone else says, though, because I want to get another of her cookbooks soon.

BTW, I saw RR's magazine at Kroger on Friday. I was in a rush and couldn't stop to really read it, and didn't think to buy it, but from what I saw it looked pretty good.

i love me some Rachel Ray recipes! This has been a fun thread to browse! One of the most-loved by my DH and guests has been the Four Cheese Stuffed Shells. It's even a great way to sneak in broccoli (i chop it and mix it with the cheeses) so that DH will eat it! i think it would be really good with some spinach too. i've also loved learning how to better make my own tomato sauce. That's been a great addition to my cooking repertoire. :)

I agree that her 30MM 2 book is one of the best. I use it more than any other one...the one I use next after that is the get real meals. I also like that one more because I try to watch my carbs so its more low carb driven.

i love me some Rachel Ray recipes! This has been a fun thread to browse! One of the most-loved by my DH and guests has been the Four Cheese Stuffed Shells. It's even a great way to sneak in broccoli (i chop it and mix it with the cheeses) so that DH will eat it! i think it would be really good with some spinach too. i've also loved learning how to better make my own tomato sauce. That's been a great addition to my cooking repertoire. :)

Could you post the recipe? I love stuffed shells, and that sounds really yummy.

Four Cheese Stuffed Shells

Salt
8 pieces jumbo pasta shells
1 1/2 pounds ricotta cheese or part skim ricotta cheese
1 pound mozzarella, diced
1/2 cup grated Parmigiano-Reggiano
1 cup shredded Asiago
1/4 cup chopped flat-leaf parsley
2 tablespoons extra-virgin olive oil, 2 turns of the pan
3 cloves garlic, chopped
1 small onion, finely chopped
1 can (28 ounces) crushed tomatoes
Salt and freshly ground black pepper
6 or 7 leaves fresh basil, torn or shredded
Preheat oven or broiler to 450 degrees F.
Bring a large pot of water to a boil. Salt water and add pasta. Cook shells 12 to 15 minutes, they should be softened but still undercooked at the center. Drain pasta and cool.

Combine ricotta, 1/2 of the diced mozzarella, a couple of handfuls of Parmigiano and 1/2 of the Asiago. Add parsley to the cheeses and stir to combine.

To a small saucepot over moderate heat add oil, garlic and onions. Saute onions and garlic 5 minutes. Add tomatoes and season sauce with salt and pepper. Simmer sauce 5 minutes and stir in basil leaves

Pour a little sauce into the bottom of a shallow medium sized casserole dish. Fill shells with rounded spoonfuls of cheese mixture and arrange them seam side down in casserole dish. Top shells with remaining sauce and remaining mozzarella and Asiago cheeses. Place shells in very hot oven or 8 inches from hot broiler and cook 6 to 8 minutes to melt cheeses and bubble sauce.

My Notes: i have never found "jumbo shells" like the ones she uses. Mine are much smaller, and i make about 20-24 of the shells b/c there really is that much cheese stuffing. (Also the leftover cheese filling can be great stuffed in a chicken breast!) i also think that this makes 5-6 servings rather than 4. Like i said earlier - i often add fresh (frozen would work) spinach or chopped broccoli to the cheeses to add some extra green and vitamins to the dish.

i watched last nights show and i'm trying those chicken cacciotore (sp?) tonight. just making the chicken, portabellos and garlic mash....not the sauce though cos it didnt look too saucey to me!

did anyone try this recipe? that marinade looks good and healthy too.

DH and I made the grilled chicken thighs cacciatore (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_31327,00.html) a couple months ago, though without the smashed garlic potatoes. It was really good but took longer than 30 minutes. We also managed to splatter a lot of oil around the stove. I think the chicken thighs took longer to grill than the time in the recipe.

Someone asked the same question about the cookbooks before, I like 30-Minute Meals 2 the best. Her new book is coming out next month! :D

Hi Everyone!

So, I saw on tv that Rachel Ray has a new magazine out, "Everyday with Rachel Ray", something like that. I saw it this evening at Kroger and thumbed through it real quick. It seemed like a pretty good mag. So has anyone else seen/read it? What do you think about it?

I thumbed through it at Borders and was fairly impressed. I need to go buy a copy and see if it is something I want to subscribe too. I love cooking but most of the magazines about it overwhlem me. My only concern with her magazine is that she uses a lot of "shortcuts" with pre-made stuff right? I almost exclusively cook from scratch.

I didn't use the oil (nonstick pan), and used an entire red pepper and a combo of shiitake and crimini mushrooms. These are on the "make again" list.

I bought her new cookbook! 365 No Repeats It looks good....I havent gone through every page yet, just kinda went through real quick. There seems to be alot of a master recipes and then a spin off or more of the master recipe....for example...theres a recipe for Mac n Cheddar with Broccoli....then the next recipe is Mac n smoked gouda with cauliflower...then tex mex mac n cheddar with beef and peppers....then smoky chipotle mac n cheddar with tomato and chorizo....so theres 4 recipes right there.


How often does the magazine come out? Is it monthly?

Just popping in to say that I recently made her meatloaf muffins with BBQ sauce. (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_29712,00.html) They were pretty tasty and achange from regular meatloaf, which I don't really care for. I think I liked these because they were individual sized and not a big, steaming hunk of meat.

I made the pancakes and they were okay. I tried to halve the recipe and I don't think it did it correctly. Next time I'll probably make the whole batch and freeze what we don't eat.

the mirror idea looked okay, but it took up so much room on the table!! that was all you could put on the entire space - all for a bunch of veggies!! not to mention those spikes - someone could fall into it and have to be rushed to the hospital! :eek: then the mirror would probably crash to the ground causing shards of glass to splatter all over the room :eek: i think i'll stick to a serving platter with smooth edges!!

I wish I had seen that! LOL, she's so happy in everyday life, I can't imagine her on her wedding day!


On a down note, I tried her Baked Spring Rolls from her magazine tonight. I've very rarely not had one of her recipes turn out, but this was a total bomb. Anyone else given this a try that could give me some hints as to what I did wrong? :confused:

Surely! I didn't do the "wreath" shape as the recipe suggests. I just poured the mixture in a 8x8 brownie pan and cut into squares. DELISH!

Five-Minute Fudge Wreath
Recipe courtesy Rachael Ray

Ingredients
1 (12-ounce) bag semisweet chocolate morsels
9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 (8-ounce) can walnut halves
1/2 cup (a couple of handfuls) currants

8-inch cake pan, lightly greased with softened butter
Candied cherries, red and green, for garnish, optional

Directions
Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir
until chips are melted and milk combined. Save the empty condensed milk can. Stir in vanilla and remove fudge from heat.
Add nuts and currants and stir in immediately.
Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan. Spoon fudge into pan around
can, making sure to recenter can if it drifts.

The fudge will set up almost immediately. Garnish can only be added in the first minute or 2 the fudge is in the pan, so
work quickly. Decorate your wreath with "holly" made from cut candied red and green cherries. A wreath left plain can be
garnished with a pretty fabric bow when serving. Chill covered in the refrigerator and slice fudge very thin when ready
to serve, a little goes a long way.

Have any of you made it with jarred sauce instead of the canned? If so, would you use 2 jars, or a jar and a half. Her recipe called for 1 can (28oz) of whole tomatoes and a 14oz. of crushed. My husband can't stand tomato chunks, so I was thinking of either using all crushed or just jarred Barilla.

My other question is about Parmigiano Regianno... could I just subsitute Parmesan cheese? I never had Parm Regiano, so I don't know how "different" it is and if it would affect the taste so much. And it $$! :rolleyes:

Last Question! Those of you that have made this, would you consider it dinner party worthy??

I don't see why you couldn't use all jarred. If there's a favorite you have, I'd give it a try.

And yep, you can use regular parmesan cheese in place of parmigiano regianno. I've seen the parm. reg. in my grocery store, but it's so darn expensive, so I just use plain old Kraft parmesan lol.



I made the 5 minute fudge the other day for my secret santa at work and it turned out great! Everyone couldn't believe it was a RR recipe.
