I want to jazz it up - I plan on serving it with rice and corn or salad. Anything fast and easy to make it look fancier? Some sort of salsa topping? Cheese sauce? White sauce? I don't have any tartar sauce either - so that doesn't work. Sounds like a weird question, but I appreciate any suggestions!

What about a compound butter? An herb or garlic butter would be yummy.
Salsa would also be yummy. You could make a fruit one if you have one on hand.
If you're sauteing the fish, you can make an easy pan sauce.

I grill my frozen fish fillets on my George Foreman and then put salsa on top. It is super yummy!

Do you thaw them first, or put them right on the grill? How long does it take to grill them?

I have a recipe for tilapia with a lemon dijon sauce. Basically make up this sauce:
½ cup mayonnaise
½ cup Dijon mustard
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon pepper
Coat the fish with it and *optional* coat with bread crumbs. Bake at 375 for about 25 minutes or until its flaky.
**A great side dish to go with this: mix rice with some corn and diced red peppers.**

I brush the filets with a mixture of LF mayo, lemon juice, and garlic, and throw them under the broiler. During the last few minutes, I sprinkle them with some grated parmesan. Good, and fairly healthy, too!

Throw them away......lol....j/k. I'm from the OBX so I can't imagin eating frozen seafood.
It all depends on what type of fish you are cooking. If it's tuna it's best to marinate it in Italian Dressing and then throw in on the grill. If it's a white fish like Flounder, Grouper, or Dolphin, grill it and brush on a mixture of butter and lemon juice.

I don't eat fish, but I make this mango salsa for lots of other dishes, and it would go very well with a white fish, I think:
Spicy Mango Salsa:
Slice a pint of cherry or grape tomatoes in half. Cube a mango into small pieces. Combine and add 1/4 to 1/2 finely minced red onion, fresch chopped cilantro (or parsley), and, if you'd like some kick, finely chopped *fresh* jalapenos. Season with salt and pepper, lemon juice, and a splash of red wine vinegar.
