I want to have a cocktail party! I'm thinking I'll have a full bar set up, a pitcher of my "signture" drink for the night, and some canapes and other hor d'ourves. But that's the part that's giving me trouble.

I need ideas for creative foods that won't require a fork. I can do a veggie tray, but I need ideas for hot appetizers that can be made ahead and cooked at the last minute.

I usually get frozen apps from Costco, like mini quiches, scallops wrapped in bacon, mini veggie eggrolls, taquitos, etc. - though you could, of course, make those too. I make crab canapes, I have made these ham/spinach pinwheel things which were pretty easy, etc. Last time we had a big party, we got a platter of sushi, too, and it was a huge hit.

all kinds of crostini (I recently made goat cheese/asparagus/roasted red pepper--they were really good, and really easy)

spanakopita

stuffed mushrooms

chicken satay

mini quiche

skewered caprese salad (stack mozzerella, basil, and tomatoes on the skewer)

I second the chicken satay. It's pretty easy to make and it only takes about 10 minutes or so in the broiler and you could have it all ready up until that point pretty far ahead of time. And if you buy chicken tenders instead of chicken breasts there's no cutting involved.

Maybe make some things that don't have to be cooked or served warm too.

What about
flat bread pizza cut into small slices
Roasted Asparagus Wrapped in Prosciutto
Mini-Marinated Beef Tenderloin Sandwiches
Creamy Mushroom Phyllo Triangles
Shrimp Ceviche Cocktail (put on little spoons or in cups?)
Crab-Artichoke Tarts
Fresh Spring Rolls with Dipping Sauce

-Bacon Wrapped Scallops
-Crab Dip w/ crackers
-Hummus w/ pita points
-Shrimp Cocktail

Whenever we have girls nights or spa days at the house I always make a platter that consists of these things:
-Crackers (variety)
-Cream Cheese
-Hard boiled eggs (chopped)
-Caviar
-Lox
*This way guests can mix and match and make whatever type of cracker they like...my personal favorite is the cracker w/ cream cheese and egg (yum!)

Here's our last menu of fork-less foods:

Roast beef service (large beef tenderloin with small buns, toppings, etc for mini beef sandwiches)

Full salmon service (large salmon with normal sides)

Asiago Cheese balls

Stuffed olive cheese balls

Date & goat cheese crostini

Fennel potato chips

Cheese service

Misc nuts

Chips & Salsa

Veggies & dip

Cucumber & crab canapes

For dessert we did cookies and cupcakes.
