View Full Version : What to serve with Latkes
My mom is bringing over latkes on Monday and I want to make some other dishes. I am thinking of making a noodle kugel (one with raisins) but I can't find my recipe. Does anyone have a good one. And what other dishes do you all recommend? Recipes welcome. :)

Definitely buy applesauce and sour cream. Sometimes a big bowl of fruit is good with all that fried goodness.
Also maybe jelly doughnuts in keeping with the fried glory?
maybebaby Thanks for the reply. Yeah I'm getting the sour cream and applesauce and fruit and my mom is bringing jelly doughnuts. But do you think I need another side dish? I thought I may need something else since I'm not making a brisket or anything. Or maybe I should? I don't know.

I would make a spinach salad to go along with all of those yummy carbs. :) Baby spinach from the bag, feta cheese, sliced pear, and walnuts. Top with your favorite basalmic dressing.

Kugel and latkes sound so good to me right now!
I think a salad would be a great other side dish, especially with latkes. I agree that something lighter is probably a nice touch.

Dal, definitely a salad. Also we had caviar with our latkes last year. I think DH saw it on a Martha Stewart show. I turned up my nose, but it was sooo good with sour cream and caviar.
We are also having a fried turkey, since my mom is a vegetarian and none of us can make brisket as good as my grandmother. We felt the fried turkey was in keeping with the holiday.

Another vote for salad here. Kugel isn't really traditional Chanukah food, probably because the latkes are already so heavy (and if they're not, they are once you add sour cream!) Mmmmmm ...
For kids, I usually cut up raw veggies and slice some hard boiled eggs for a little protein.

My MIL has the absolute best noodle kugel recipe ever. Of course, I don't have it handy here. I'll post it from home, though. I'm making it myself this weekend to go with our latkes and other feast foods.

This is my mom's recipe. I made it last week and it was the first time my guests had kugel and they LOVED it!!! Some even asked me for the recipe.
1/2 lb medium noodles
1 stick butter or margarine, softened
8 oz cream cheese, softened
3/4 cup sugar
4 eggs
1 tsp vanilla
1 cup milk
1/4 tsp cinnamon (I used a little more because I like cinnamon)
Frosted Flakes
Cook noodles
Cream butter, cream cheese and sugar
Add eggs, vanilla, milk & cinnamon
Mix with noodles
Pour into greased 9x13 dish
Refrigerate overnight
Put Frosted Flakes on top
Bake in 350 degree oven for 1 hour and 15 minutes

Here's that recipe I promised:
1/4 cup margarine or butter, softened
3 eggs
1 cup lowfat sour cream
8 oz lowfat cream cheese
1/2 cup sugar
8 oz cooked wide noodles (lasagna noodles)
Topping:
1/8 cup margarine or butter
1/4 cup sugar
1 tsp cinnamon
1 1/2 cups crushed cornflakes
The day before serving: Grease an 8x8-inch pan. Cook noodles according to package directions and drain. Mix first 5 ingredients in a bowl. Put drained noodles into prepared pan and pour mixture over them. Mix well.
Also the day before: Prepare the topping by melting the margarine and mixing with the remaining ingredients. Spoon on top of noodle mixture. Cover with foil and refrigerate overnight.
The day of: Bake at 350 for 45 minutes, uncovered.
*You can double the entire recipe and bake in a 9x13x2-inch pan for 1 hour.
