I am hosting a party after my DD baptism this weekend and will be making lunch meat trays. How much lunch meat should I buy - I will also be serving fried chicken (grandma is making this and she probably won't make enough for this to be a substantial contribution), meatballs, wings, roast beef from the grill, dips, chips, salads (potato, macaroni)...there are about 40 people attending.

Hmm. It's hard to say without knowing how much of the other meats you'll be serving. How much roast beef, meatballs and wings will there be?

a few crock pots of meatballs (MIL will probably make quite a bit) and wings -probably a few trays as well - out of the 40 people - I would like to have enough meat to make 50-60 sandwiches (some people might have two)..I plan on getting 2 roasts probably about 3 pounds each. My goal is to have the meatballs and wings as starter/fingerfoods and the sandwiches as the 'main course'. The service is at noon and we will be serving food around 2 - so this isn't a dinner...

Also, how many different lunch meats will be on the tray?

A pound of each:

Turkey
Ham
American cheese

1/2 pound:

salami
provolone or swiss

I found this site, but at first glance it looks like it is mostly for larger numbers of people (100+). Still, you might be able to use some of the guidelines/suggestions and just figure out how much you need for 50-60 sandwiches??
