My birthday is on Friday and Saturday night after DH and I and some friends go to the clubs and have drinks were all coming back to our apartment to hang out and have drinks and movies and stuff. I'm going to the grocery store on Thursday morning. What would be some good "snack" type foods to buy. Obviously crackers, cheese, salsa, chips etc. What are some fun things I could put together. I love to cook so don't hesistate to post some more difficult thing.s I was thinking I would make some homemade cookies also. Maybe pick up a fresh veggie tray or some sort. Keep in mind this will be happening after midnight so not a TON of food in necessary just some snack type stuff for about a couple hours. TIA!!!

I like to make those little roll-ups where you spread cream cheese on tortillas & then add some lunchmeat slices like turkey or ham. Then you roll them up, stick in toothpicks every inch or so to keep them from unrolling, & then cut them into pieces between each toothpick. Quick & easy to prepare, can be made in advance or at the last minute, & it's easy finger food for people to eat. By using different flavors of cream cheese &/or different types of tortillas (sometimes I use the green ones) you can add some variety in flavors/colors, etc.

Oh, sometimes I add this yummy pepper relish I get from Harry & David's - it's sweet but also a bit spicy. I usually only put this relish in some of the rollups though, because not everyone likes it.

Good luck, & happy birthday! :D

I second the roll up sandwiches! I make them for almost every get together we have and they are always one of the first things to go. I also like making 7-layer dip or a queso dip with Velveeta cheese and a can of Rotel spicy tomatoes mixed together and then melted in the microwave. Yum! All this talk of party food is making me think we should have some people over this weekend:D
Have a wonderful birthday!!

I usually do something similar to what TennJane said - melt a jar of salsa and a brick of velveeta in the microwave and serve it with Nachos - it's fast to make and goes quick. Actually, here's a whole bunch of Velveeta recipes. (http://www.kraftfoods.com/Velveeta/main.aspx?s=recipe&m=recipe/knet_recipe_grid&u1=bytype&u2=6*49|126|445*809*&u3=6*DESC) I know it ain't gourmet, but it's easy. And easy is a good thing - especially after midnight. :D

Spinach Dip!

Cold Recipe:

Sour Cream
Frozen, thawed and squeezed dry spinach
Dry packet or Ranch Dip mix

Mix together and lets say you use a large tub of sour cream, you may need a pack a half of the spinach and Ranch, I mix to taste, Serve with assorted crackers or tortilla chips, you can even put a little shredded parmesan (I just buy a small tub of the hard, shredded kind) on top. It so simple and a big hit at parties. It's my signature dip! Pretty cheap to make too.

And a Hot version I've made, courtesy of Paul Deen, this one is so easy and delicious!:

Hot Spinach-Artichoke Dip Recipe courtesy Paula Deen

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: about 4 cups

1 (10-ounce) package frozen chopped spinach
2 (13 3/4-ounce) cans artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated Parmesan
1 cup grated pepper jack cheese

Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.

Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor.
Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes. Transfer to a chafing dish and keep warm over a low flame. Serve with bagel chips.

I'm sure you could pre-assemble this one and pop in the oven when you get home.

Wow Thanks ladies! Those rollups are a GREAT idea along with the dips. I'm going to do the rollups for sure. I thought about that but didn't realize how easy it was :) Thanks girls off to go make my list :D

Honestly, after being out drinking at the clubs, I would skip the veggie and cheese platters and serve the greasest food you can find. But maybe that's just me :)

Pizza rolls, chips with queso & salsa (or better yet, that seven layer mexican dip stuff), mozzerella sticks....you get the picture.

If it is feasible, I think having some breakfast food would be really good. Scrambled eggs and sausage links...YUM! That may be why I love to go to Waffle House after a night of drinking, though.

Biscuits and gravy would be good! It seems like breakfast food soaks up the alcohol and I'm never sick the next day after a big meal at I-HOP!

MMMMM, biscuits and gravy is the ultimate hangover food. Though I prefer Bob Evans to IHOP :)

I love the breakfast food idea!!
