It’s great when a veggie meal tastes so good that non-veggies want it as well. But to anyone cooking for veggies and non-veggies alike: if you think that is going to happen, please be sure to make enough food for everyone! There have been so many times I am excited for the veggie meal someone prepared only to get a tiny portion because all of the meat eaters want to take a taste as well. Somehow they all seem to forget that while they are also eating turkey, turkey-filled stuffing and chicken-based soup, I have nothing else but salad!

My vegetarian mother-in-law is joining us for Thanksgiving this year - her first Thanksgiving, in that she is from Scotland. I have adjusted all my side dishes so they are made with vegetable stock rather than chicken/turkey stock so she can indulge in everything but the turkey. And I am making her a nut roast, which apparently is pretty common in the UK as a vegetarian holiday meal. I’m really excited about it and hope it goes well… wish me luck!

Oh, I agree about the tofurkey! My DH will eat almost anthing, but NOT tofurkey. I still remember the first (and only) time we tried it- it was sooo nasty. It was so rubbery that it squeaked when you chewed it!

I was a veg for many, many years (until DD developed her food allergies- I just found being a wheat-free vegetarian too hard), but I actually never bothered with a seperate entree at t-giving. I just love all the side dishes so much!
