Personally, I’m not a fan of the new year resolution announcements. I’m more of a yearly goals kind of gal. But that’s really neither here nor there. While reading over the ConstantChatter thread on New Year’s Resolutions, I’ve come to realize that the most popular resolutions seem to be about losing weight and exercising more, budgeting, menu planning, getting out of debt or improving the current job situation and TTCing. While I can’t help you with your job or your baby making, I can help with the rest.
I’m a cookbook collector - just go with me here - I’m one of those people that actual reads cookbooks. A fews years back, while killing time in my favorite bookstore, Book Soup, I stumbled across A Slob in the Kitchen by Karen Duffy. Some of you may have remembered Karen Duffy from her time at MTV or even from her modeling days. She’s not exactly what I would have considered a cookbook author in the making. But it’s a damn fine book (and a bargain on Amazon).
So what does any of this have to do with helping you with your resolutions, you ask. Easy. I’m going to share with you one of the easiest (and I do mean easiest) recipes. Not only is it easy, but it’s inexpensive and healthy. So you’ll be able to get a head start on eating right and losing weight, menu planning and budgeting and saving money and getting out of debt. You’re on your own for the TTCing and that new job.
White Bean and Pesto Soup (serves 4)
- 2 cups chicken broth or stock
- 2 19-ounce cans of white beans, drained & rinsed
- 2 tbs of pesto sauce
- 2 tbs grated Parmesan cheese
In a saucepan, bring the broth to a boil. Add the beans and simmer for a couple of minutes. Stir in the pesto. Top the bowl with Parmesan.
I sometimes like to add two links of Italian sausage that’s been cooked and drained, or you could add some leftover chicken or turkey. Pair it up with a side salad and some rolls and you are good to go.
