Now maybe it’s just me, but when I start a new diet healthy lifestyle, I usually jump right into it full force. The challenge is keeping it up. So having just recently started on the Big WW, I’ve decided that it was time to try my hand at some new recipes (mind you, this was after I spent a gazillion dollars on all the healthy grab-it sorts of foodstuffs).
Today’s test kitchen project…2 Point Pumpkin Muffins! Easy peasy, all it required was a box of spiced cake mix, a can of pumpkin and 1/2 a cup of water. Really, how simple could it get, right?
Yeah, too bad the bozo that posted the recipe on the Weight Watcher’s site screwed up with the temps and time. I just knew, deep down that muffins would NOT bake at 250 degrees. Let alone bake in a mere 20 minutes. But I forged ahead with my new, low point, baking endeavor. And yep, you guessed it, they were totally and completely uncooked. Some might even say they were downright raw.
Never one to just let things happen, I quickly raised the temp (to a much more agreeable 350) and let them go for another ten minutes. But they were still just too runny. Ten more minutes later, perfection! So while this may be yet another lesson in learning to trust my instincts, I have to say, they are some damn tasty muffins.
Is it wrong to think that they’d be better still with chocolate chunks? Baby steps, I know.



If you’re looking for a quick 1 pt cupcake recipe, take one box of the cake mix, and 1 can of regular coke, mix together and bake.
Now, I don’t know whats in coke, or whats in that cake mix…but trust me this works!! And it’s 1 pnt for each cupcake
You can also use lemon cake and a 7-up, or whatever cake/pop creation you want to try.
